Use a blender to blend the soup until smooth. Adjust Consistency: Check the thickness and taste of the soup. If needed, add water and salt to achieve the desired consistency. Pass the soup through a sieve. Plating: Reheat roasted onions in the microwave for 30 seconds. Place a few spoons of roasted onions in the bowl. Add cheesy croutons on top, followed by pickled shallots and fresh apple sticks. Garnish with Carrot Tops. Pour the creamy onion soup over the ingredients. Serve: Enjoy the creamy onion soup with a delightful combination of flavors and textures.

The classic one is so good to me, that I find it hard to believe it can be improoved. Yours seems good, but I would need to taste it to be sure if it´s better than the classic. The texture of the classic is also probably better since you blended everything.
Can you show us how to make super light and airy frozen chocolate mouse I had it at a very fancy restaurant before and I would love to know how to make it at home
You dont need liquid nitrogen. What you are looking for is a Semifreddo recipe. As you said it is just a chocolate mouse that is then frozen. It creates a very airy "ice cream" style dessert without the need for churning.
Looks delicious. Nice technique and nice presentation. The only thing to suggest is that soup is eaten with a spoon which suggests one mouthful. Your cheese bread might be better in crouton sized portion.

Onions were the food for everyone. They were plentiful. 200 years ago, a farmer's wife would re-stoke the stove, put a large dutch oven on it and toss in lot of onions, butter and wine. I would cook for hours. This would be used for lunch, dinner and supper.

You will make a lower quality product but it will work probably
