    As an avid Onyx Coffee Labs coffee buyer I really appreciate Elika and his instructional videos, he is able to not only give the information up front, BUT also explain a lot about the coffee in the midst of pouring/conversating. Not everyone has a Comandante C40, so having that fine/med/coarse reference is nice or how other grinders relate. It is tough to take notes of how to brew this coffee (or what the recipe is, how it should taste, look etc..) if the brewer isn't in tune. Especially, since this coffee is SO expensive. I wish a better brew guide would have been done. I am sure the brewer is the best, but I miss Elika. Please, bring him back or put him on these expensive coffee offerings. That is all. Thank you! -- Also, this is amazing coffee, no matter the brew style. Truly great.

    16g @19clicks on C40, 205F water
    30g bloom
    @ 30s: Spiral pour up to 85g
    @ 1m: Pour up to 165g
    @ 1m50s: Pour up to 255g
    Drawdown time should be ~3m20s

    I had a coffee from this region recently. It was SO good, a coffee that I will remember
