    -Cleaned and Plucked Whole Specklebelly Goose
    -Citrus Slices (Lime, Lemon, Orange, etc.)
    -Onion, Garlic, and/or Shallots
    -Black pepper
    -Garlic Powder
    -Kosher Salt
    -Olive Oil
    Supplies:
    -Large Mixing Bowl or Stock Pot the Goose Will Fit into
    -Smoker or Grill that can stay at 250 degrees F without issue
    -Sharp Knife
    -Instant Read and/or Remote Meat Thermometer

    @2:20 If my goose is beneath my fire, we've got problems! I've got a little Akorn Jr. might not fit a goose but I'ma try a duck!

      A duck should work just fine as a substitute. If you’re working with ducks you hunt, make sure it’s a puddle duck and not a diving duck. Farm raised duck, it’ll be perfect. Thanks for watching, Phillip and let me know how it turns out!
