Ingredients:
4 cups of peeled garlic cloves
2 - 5 Habaneros cut into coin slices
1 tsp. of crushed red peppers
2 tsp. pickling or kosher salt
1 cup water
1 cup white vinegar (add more if garlic isn't completely covered in jar)
Supplies:
1 Quart mason jar
1 New mason jar lid
1 pot to boil 2 cups of liquid
Sharp Knife

Why the garlic turn blue?
It's just a harmless enzyme reaction, which happens due to an enzyme calledalliinase, which breaks down the amino acidalliin intoallicin. Allicin is what makes the garlic turn blue when pickled in a vinegar solution. Thanks for watching!
