I’ve been watching and re-watching this for 5 years. I finally made it last night and it was absolutely incredible. One of the best meals I’ve ever made.
I just made a VERY knocked off version of this and it came out /incredible./ My dad and I ate the whole thing up and now we're both stuffed and very happy. Guys, do this, and make it as true to the recipe as you can, because it will blow you away.
Tried it just 30 minutes ago, very easy, delicious, it has the nice little kick from the spicyness of the merguez, and the tomatoe mellows it and create a sauce for the pasta, very good and family friendly.

Only downside is crappy supermarkets don't have all the lovely different colored tomato's so try and find a greengrocer. I just bought some ripe toms on discount and quartered them. Will definitely be making this again. (I forgot the celery so just used a peeper instead. I'm not a fan of celery anyway.) Edit, it' a pepper not a peeper, that's a recipe for disaster.

I MADE THIS. IT WAS AWESOME!!! 9/10 I used Mangalitza Pork Sausages, Merguez Lamb Sausages, and Spicy Italian Sausages to give a wider assortment. I also used both RED and WHITE onions. I skipped the celery. Used rosemary instead of thyme. Found quality fresh plum tomatoes. AND BAM! Best pasta i've had this month.
Omg when I first started watching this video, I screamed Noooooo Pork but when it was the sausage I know from childhood :) I'm even more excited to try this recipe
I liked the apron too. That looked like a nice recipe. Haven't tried those sausages yet but I've been using Andouille sausages lately. Can't wait to move back home and start using the fantastic varieties there. Yum.

Nice little tip: to evenly cook the sausage, pour some water into the pan, put the sausages in. Let the water evaporate. The sausages will be juicy and caramelized.

On that note, one of my pet dreams, a sort of "achieve before you die"-thing, is working with a few local farmers to produce a new cheese, one taking note of the wonderful and unimitable Italian hard cheeses that all pasta need.
