3 easy & delicious summer MOCKTAILS! | no tequila margarita, strawberry flip, watermelon cooler

i love these mocktails. i hope you do, too!
no tequila margarita: 1.5oz lime juice, 2oz, jalapeno simple, shaken with ice, strained into a martini glass, topped with tonic (if necessary). rim with tajin, garnish with a lime wheel and slice of jalapeno.
jalapeno lime simple syrup: equal parts sugar & water (i used 1C), 1 bunch cilantro leaves or steams, 1-3 slided jalapenos. heat for about 5 minutes, until sugar is dissolved and simple tastes as you desire. strain and cool. store in the fridge.
strawberry flip: .5oz lime juice, 2oz strawberry simple, 1 egg white (or .5 oz aqua faba). mix together, dry shake (no ice), add ice and shake, strain into a gimlet glass. garnish with strawberry and lime wheel.
strawberry simple syrup: equal parts sugar & water (i used 1C), 1/2-1C strawberries. heat for about 5 minutes, until sugar is dissolved and simple is flavorful and pink. strain and cool. store in the fridge.
watermelon mint cooler: 3C cubed watermelon, blended and strained. add 1/4C lime juice. muddle mint and lime in the bottom of a mason jar. fill with ice and halfway with watermelon/lime mixture. top with club soda. garnish with lime wheel and watermelon wedge.
