     2C cous cous - $4.29
     2 pounds bone in, skin on chicken thighs (6-8 thighs) - $6.99
     2T butter or oil
     1 white or yellow onion, sliced - $.79
     3 garlic cloves, minced - $.70
     Salt & pepper
     1 tsp cinnamon - $1.29
     2 tsp ginger - $3.29
     2 tsp cumin - $1.29
     2 tsp ground paprika - $4.39
     1 tsp ground coriander - $2.99
     Pinch cayenne (optional)
     2, 28oz cans diced tomatoes ($1.59x2)
     2, 16oz cans chickpeas ($1.69x2)
     1/2C raisins (optional) - $3.19
     Cilantro (optional)- $1.89
    Cost:
     Between $32 (no optional ingredients) and $40 (all optional ingredients)
     $8-10 PP (four servings)
    Method:
     In a large pot or skillet, boil water and cook cous cous according to package directions. Remove to a bowl, cover, and set aside.
     In the same large pot or skillet, add chicken thighs, skin side down. Cook for 3-5 minutes on each side, until brown and crispy and fat has rendered, but not cooked through. Remove to a plate.
     Using the leftover chicken fat and adding more butter or oil if necessary, add the onion, stirring occasionally until translucent (5 minutes).
     Add the garlic, spices, and salt and pepper to taste. Cook, stirring, for about 30 seconds.
     Add the tomatoes, chickpeas and raisins, stirring to combine and scraping up any browned bits from the bottom of your pan. Taste and add salt & pepper as necessary.
     Nestle the cooked chicken thighs in the broth, adding water if necessary to completely cover them. Cook on medium low heat for 20-30 minutes or until the chicken is cooked.
     Serve over the cous cous and sprinkled with fresh cilantro if desired.
