ひさ田、ます田、こま田、よし田など
名店にひらがな2文字＋田の鮨屋が多いのはなぜでしょう？気になります。

和食のお店がひらがなと漢字を組み合わせことが確かに多いですね。その伝統、慣習が鮨屋にも影響しているということではないでしょうか？
いつごろからなのか、私も不勉強でわかりませんが。
