Yes, when I was a bartender, I was being taught things like ice and how much it can make a difference if you use really good ice. And we had a Japanese ice maker that distilled water before freezing it. The ice cubes lasted longer than regular ice cubes.
Those Hoshizakis purify the water it's freezing - if that's the machine you have. They spray water up into a little mould that's chilled and upside-down above the spray head - and as the video say, the pure water freezes first, right when it hits the mould. The impure water, with its lower freezing point, simply drains away. It's pretty ingenious.
OMG yes. Watching people be excited and enthused over non-political passtimes/hobbies/passions that they want to share with others is such a nice break from all the Crazy. The desire for for good food and drink unites us all, I definitely would have had a much harder time in lockdown without several FoodTubers/BoozeTubers and tech/maker channels just doing what they do and doing it well, just like this guy.

I went to a coffee shop last weekend and found that their ice melted a lot slower, like almost 2-3 times slower than any other coffee shops I’ve had. Now that I think of it, they were most likely using clear ice! Very interesting

This is strangely interesting to me as a materials technologist. We spend a lot of time thinking about how metal solidifies and the crystal structures they form. The purity of a metal and it’s handling afterwords are all eerily similar.

ne tip I found was that after you place your ice cubes in the bag, stop by the freezer every now and then and give them a shake. This will keep them from sticking and you having to use something to break them apart. They stay clear as long as they are not contaminated with something from fridge.

If you have an instant pot or pressure cooker you can get distilled water by using a high temperature food grade tubing attached to the steam vent into a catch container also heat safe, like a pyrex measuring cup. Just keep the lid cracked so that it doesn't pop the tube off and keep the temperature down - even though there isn't much visible vapor as long as the water is evaporating at the maximum rate the tube can accept it boiling it off any faster has no profit to it.
I love listening to this guy talk about something I'm never going to do. I appreciate his nerdiness about it. But I barely keep up with the dishes. Lol!
Well done. Here is one more gourmet ice experience. My wife and I made literally 10's of thousands of "Shave Ice" over 20 plus years. We would take a 25 cubic foot non-frost free freezer and fill with 300 lb ice carving blocks trimmed down to about 7 lb cubes. Turn off freezer for 2-3 days to warm entire freezer to near melting point. Place each block in Swan Ice Shaver ($2000). Spin at 400 rpm and slice slivers of ice with razor sharp stainless steel blade. Even without syrups this ice was heavenly. Oh yes. Lines 50 people deep added to the taste. ;>)

Stuff it, I guess I can add something of my 2c worth. If you get a reverse osmosis filter, you usually have a 4:1 bypass. Meaning it makes 4L of impure water for every 1L of pure water. You can actually push this to a 2:1 ratio, but this cooler method looks to actually have a better ratio than that.
wow this was a really informative video! Best ice-making video I've watched yet! Makes sense because the impurities are more dense so they sink to the bottom of the body of water as they're freezing.
I don't know why I'm going to bother, but I suppose his terminology bothered me a bit. The reason cubes get cloudy and melt faster are because of trapped air, not necessarily impurities. Making cubes in the freezer, water freezes from the outside in, trapping air pockets. The insulated cooler keeps the ice freezing from the top down, then he disposes of the water where the air would be trapped. I've seen commercial clear ice made with a vibrating tray that freezes from the bottom up, so it's not that there's anything settling.
The cooler method is 100% worth it. I do it every other Sunday and it supply’s me with enough crystal clear ice blocks for 2 weeks. It’s upfront effort but in the end it ends up being not that bad.

I glad to put to rest the boiling or distilled crap. Essentially you just need to make sure the water doesn't freeze completely. You can use any type of container you want, but just don't let it freeze completely. I've sometimes used a simple ice-cream pale.
We have a reverse osmosis system under the kitchen sink as well as a whole house water softener at the main. I haven't even tried to see how ice would look with the new system yet. We are still working on the rest of the house. Should be interesting.
Water softener actually adds impurities to your water....it just neutralizes pH level. The RO system in your sink probably burns out within days. The best way to RO water is filter it before hand. My water for my house has 3 filters to keep all the rust and crap out before it even goes into my water heater. 100 microns, 50 microns and 25 microns.
You could use a small pump to increase your yield. Hard part is you do it backwards from how we do it in the professional industry (we are also making 300lb blocks). 1 tube at the bottom going to the pump and a return to the bottom on the other side will create a current that will cause the air and minerals and other impurities to separate. We use special machines referred to as Clienbells in the carving industry, our cold plate is on the bottom and the sides and top are insulated, so it freezes from the bottom up and then we drain what little bit remains from the top. Granted we do use a band saw to cut the block down, so if it does freeze to much we are able to easily just cut it away. You could do the same with a burle torch and melt away the imperfect once it is tempered (Like he siad, DO NOT DO IT IMMEDIATELY or you risk cracking the ice. You can also do the canned ice method which you put a bubbler in the middle which causes all the impurities to form around it, but this leaves what we call a "Feather" in the middle, because that is what it looks like. I have never made canned ice, only Clienbell ice, so I only know the process for being told, though I have used those blocks and not liked them

The white part of the ice is not “impure water”, it’s larger ice crystals that take longer to freeze. That’s why the water at the top of the cooler is clear, it was quicker to freeze. Don’t waste 2/3 of a cooler worth of ice, and instead pre chill the container and water so all the ice freezes quicker. You could freeze in smaller containers too.
Awesome. Question: if you make it and save it in the bag won't it just break when you add it to the drink like your example? Do you have to wait for it to acclimate as well then?
I would assume so. The cracking is due to thermal shock, so putting it back in a freezer would drop the temperature of the ice again, requiring another acclimation period when you want to use it.
I tried all the conventional "google" recommendations of boiling, using distilled water, freezing slowly in cooler etc. and none of them worked. I am really excited to put this video in to practice.
There's definitely a Chemistry explanation of this, which I admit I don't know for certain. I would bet that most of the frostiness of regular ice is the frozen dissolved air inside, so these more rigorous freezing methods primarily freeze the water that has already had the air rise out of it (air is lighter than water, so due to gravity, the air rises and to the top and out of of the freezing water). I'm sure a water filter makes the water cleaner, but it also results in less air dissolving into the water that occurs when it pours quickly out of the faucet. I think this guy's presentation (while really impressive) overemphasizes the "purity" of the water.
Furthermore, I tried to make ice out of demineralised (highly pure) water, using cheap chinese ice-maker. First cubes were clear as glass, however by the end of batch (about 2 kgs of ice capacity) ice became white as if it was made from tap water. Icemaker was clean, only DI water was used so there were no impurities, only conclusion is that air dissolved in water in a short time.
It is a physics explanation. Regular icecubes freeze all around on all sides, since it is on the outside that the water gives of its temperature to the environment. So you have a 6 sheets of ice and a kernel of cold water that still needs to freeze. Once the water on the inside freezes it builds up pressure since water expands when it turns into ice(this has to do with the electrical dipole of the H2O molecule). This ice that expands on the inside thus cracks up the outer shell that has been frozen solid already. This process repeats over and over until the core is also frozen. Also the crystaline structure of the different ice crystals on those sides aren't going to be aligned so when these seperately started ice-crystals meet you have another stress factor there which will cause cracks. Thus the white fog in regular icecubes is simpy a mesh of micro cracks. Using an insulated vessel has he does in the video you get a thin layer at the top of clear ice and all the heat energy needs to leave at the top, so the water at the bottom remains "warm enough" to remain liquid. You can see this when he tips over the container. So you give the ice-crystal a nice growing path without encapsulating water and gases that later crack up the ice by expanding => no cracks and clear ice🙂
@@davidheremans6978 I think you're wrong because I've seen that installing a small water pump inside the ice-maker tub to stir water creates clear ice with no other changes in setup. I do not know the physics behind it, but I do know this: without a pump icemaker makes white (and fragile) ice, with pump - crystal clear (and very hard) ice.

By stirring the water you makes sure that the water is constantly mixed so you do not get colder outsides that freeze first and encapsulate warmer water. This way all waters heat get disposed of in a more evenly spread manner. Once cold enough you will notice that the water becomes like a slushy. Then you get a seeding ice crystal and all the other cold water use this starting crystal to grown upon and there you go, one big nicely aligned crystal structure.

I tried the cooler method to making clear ice with an insulated lunch box (a little cooler that comes with two parts, a plastic bin to hold food, or in this case, water, and the insulation that it would go in), and to my surprise, it worked pretty well. Was there still a little cloudiness, sure, but it was mostly clear, just a little corner that could be taken care of with just a bit of shaving (which I didn't do because A, I'm lazy, and B, I didn't want to dull a knife by whittling ice) or some warm water.

It could also be the temperature of the coffee before it meets the ice. The ice could also be stored well below freezing.
Clear ice doesn't exactly melt slower... there's just more water in the same size cube so it takes longer to melt all of it.

Distilled water doesn’t make clear ice. Try it, and you’ll see. This is about directional freezing, not water purity.

I've seen commercial clear ice made with a vibrating tray that freezes from the bottom up, so it's not that there's anything settling.

The cooler method is 100% worth it. I do it every other Sunday and it supply’s me with enough crystal clear ice blocks for 2 weeks. It’s upfront effort but in the end it ends up being not that bad.

After you cut and put clear ice cubes in zip at the freezer you should shake the bag after 10 mins to prevent makin’ one big rock of clear ice

Very nice I think I'm going to be spoiled now with only selecting Clear Eyes in my drinks. Thank you very much for educating me on the difference I never knew that there was such a thing as clear ice, and how it's surprisingly sought after as the best alternative.

Essentially you just need to make sure the water doesn't freeze completely. You can use any type of container you want, but just don't let it freeze completely. I've sometimes used a simple ice-cream pale.

We have a reverse osmosis system under the kitchen sink as well as a whole house water softener at the main. I haven't even tried to see how ice would look with the new system yet. We are still working on the rest of the house. Should be interesting.
Water softener actually adds impurities to your water....it just neutralizes pH level. The RO system in your sink probably burns out within days. The best way to RO water is filter it before hand. My water for my house has 3 filters to keep all the rust and crap out before it even goes into my water heater. 100 microns, 50 microns and 25 microns.

Don't really drink that often nor make drinks, but it was really interesting to watch no matter what
You could use a small pump to increase your yield. Hard part is you do it backwards from how we do it in the professional industry (we are also making 300lb blocks). 1 tube at the bottom going to the pump and a return to the bottom on the other side will create a current that will cause the air and minerals and other impurities to separate. We use special machines referred to as Clienbells in the carving industry, our cold plate is on the bottom and the sides and top are insulated, so it freezes from the bottom up and then we drain what little bit remains from the top. Granted we do use a band saw to cut the block down, so if it does freeze to much we are able to easily just cut it away. You could do the same with a burle torch and melt away the imperfect once it is tempered (Like he siad, DO NOT DO IT IMMEDIATELY or you risk cracking the ice.
You can also do the canned ice method which you put a bubbler in the middle which causes all the impurities to form around it, but this leaves what we call a "Feather" in the middle, because that is what it looks like. I have never made canned ice, only Clienbell ice, so I only know the process for being told, though I have used those blocks and not liked them

The white part of the ice is not “impure water”, it’s larger ice crystals that take longer to freeze. That’s why the water at the top of the cooler is clear, it was quicker to freeze. Don’t waste 2/3 of a cooler worth of ice, and instead pre chill the container and water so all the ice freezes quicker. You could freeze in smaller containers too.
Awesome. Question: if you make it and save it in the bag won't it just break when you add it to the drink like your example? Do you have to wait for it to acclimate as well then?
I would assume so. The cracking is due to thermal shock, so putting it back in a freezer would drop the temperature of the ice again, requiring another acclimation period when you want to use it.

I tried all the conventional "google" recommendations of boiling, using distilled water, freezing slowly in cooler etc. and none of them worked. I am really excited to put this video in to practice.
There's definitely a Chemistry explanation of this, which I admit I don't know for certain. I would bet that most of the frostiness of regular ice is the frozen dissolved air inside, so these more rigorous freezing methods primarily freeze the water that has already had the air rise out of it (air is lighter than water, so due to gravity, the air rises and to the top and out of of the freezing water). I'm sure a water filter makes the water cleaner, but it also results in less air dissolving into the water that occurs when it pours quickly out of the faucet. I think this guy's presentation (while really impressive) overemphasizes the "purity" of the water.
100% agree that the Pure/Impure was total BS.
Furthermore, I tried to make ice out of demineralised (highly pure) water, using cheap chinese ice-maker. First cubes were clear as glass, however by the end of batch (about 2 kgs of ice capacity) ice became white as if it was made from tap water. Icemaker was clean, only DI water was used so there were no impurities, only conclusion is that air dissolved in water in a short time.
It is a physics explanation. Regular icecubes freeze all around on all sides, since it is on the outside that the water gives of its temperature to the environment. So you have a 6 sheets of ice and a kernel of cold water that still needs to freeze. Once the water on the inside freezes it builds up pressure since water expands when it turns into ice(this has to do with the electrical dipole of the H2O molecule). This ice that expands on the inside thus cracks up the outer shell that has been frozen solid already. This process repeats over and over until the core is also frozen. Also the crystaline structure of the different ice crystals on those sides aren't going to be aligned so when these seperately started ice-crystals meet you have another stress factor there which will cause cracks. Thus the white fog in regular icecubes is simpy a mesh of micro cracks. Using an insulated vessel has he does in the video you get a thin layer at the top of clear ice and all the heat energy needs to leave at the top, so the water at the bottom remains "warm enough" to remain liquid. You can see this when he tips over the container. So you give the ice-crystal a nice growing path without encapsulating water and gases that later crack up the ice by expanding => no cracks and clear ice🙂
@@davidheremans6978 I think you're wrong because I've seen that installing a small water pump inside the ice-maker tub to stir water creates clear ice with no other changes in setup. I do not know the physics behind it, but I do know this: without a pump icemaker makes white (and fragile) ice, with pump - crystal clear (and very hard) ice.
@@visnjamusa9395 no, it is still the same principle. By stirring the water you makes sure that the water is constantly mixed so you do not get colder outsides that freeze first and encapsulate warmer water. This way all waters heat get disposed of in a more evenly spread manner. Once cold enough you will notice that the water becomes like a slushy. Then you get a seeding ice crystal and all the other cold water use this starting crystal to grown upon and there you go, one big nicely aligned crystal structure.

I tried the cooler method to making clear ice with an insulated lunch box (a little cooler that comes with two parts, a plastic bin to hold food, or in this case, water, and the insulation that it would go in), and to my surprise, it worked pretty well. Was there still a little cloudiness, sure, but it was mostly clear, just a little corner that could be taken care of with just a bit of shaving (which I didn't do because A, I'm lazy, and B, I didn't want to dull a knife by whittling ice) or some warm water.
