I make clear ice the same way. You want to make sure to wait a good while after removing the block from the cooler so that it is well tempered. The reason why we let it temper is because warm ice is ten times less brittle than cold ice. If you were to dive right in and try to cut the block straight out the freezer it would shatter and you would waste a lot of the block. A large block from the 6-pack cooler can take around 30 minutes to temper; wait until it is glossy and wet on all sides. Your patience will be treated with a block that will cut straight and true into nice cubes or strips without shattering.
Question, I know he mentioned storing the rest of the cubes he made in freezer bags... Is that a good method? And does it keep the cubes you made clear?

Well done video on clear ice. I have used this method for years and it works just as shown in this video!!! the comments about needing clean water to start with are spot on. My local tap water changes in quality ad sometimes will result in cloudy ice, so during those times, I switch to bottled water and it works perfectly again. Two quick tips; 1) when taking ice from the freezer give it about 3-5 minutes to temper so it doesn't crack when you pour whiskey over it as it will ruin the clear ice with cracks, 2) when putting your freshly carved ice in the freezer, it can be very helpful to pull the bag out of the freezer after about an hour and bang it gently on a counter so all the large cubes don't freeze together once they set. Hope you find these tips helpful . . .
I've been doing this for a couple of years now, and two things... one, the cubes self-heal after cracking under the stress of room temp whiskey being poured over them. Within a few minutes, the cracks re-freeze, and the cube is clear again. And, I put the cut cubes back into the cooler and into the freezer for 15-30 min, then take it out and drop it onto it on a hard, e.g. concrete or stone, surface a couple of times, and the cubes generally come apart easily.
I just watched the video and have my cooler of water in the freezer. Brita filtered. My tap water is from Lake Champlain and heavily chlorinated. The Brita does remove the chlorine taste.
JS needs to add about $20 to his budget for anyone who is married, to buy a basic, serrated knife for cutting ice, because if I hammered my wife's serrated German chef's knife into a block of ice she'd find another use for that knife! =-o
Awesome video! I have tried many methods and this is easily the best. A good tip for anyone wanting to try this is don’t use a fancy bread knife. It WILL dull the blade faster. Invest in a cheap amazon knife you don’t care about. Also if you refreeze the cubes in a gallon bag they will get foggy when you take them back out. Just put them in the glass and let them sit for a good 5 min and they will be perfectly clear again. Also if you pour liquid on the cubes right out of the freezer they may crack.

A nice cool glass of good bourbon with a single clear cube is a reward in itself and I feel proud of the small amount of work that I put into it. Thank you for a very clear instructional video on making clear ice! I've heard of using the cooler method before, and watch other videos, but your presentation was very clear, well explained, and well placed. That being said, I came up with a hack using 1/2 gallon milk cartons and insulating sheets of foam from food delivery boxes. Cut the top off, wash the inside of the carton, wrap the sides and bottom of the carton with the insulation sheets, fill with water and freeze. Works well

I was looking at clear ice makers and the cheapest was around 30 dollars and only made 2 cubes. I already had a little playmate cooler, a mallet and a knife and my wife told me we had a freezer, so I thought I’d try it. I’m glad I did. I got a lot of very clear ice and it cost me nothing. I've seen some other videos that say to boil the water or use warm water. I followed your instructions and just used my filtered tap well water. The process was less messy than I thought it would be. I put the cutting board in the sink and removed the block there to drain the water and trim the block. Then I put the board on the counter next to the sink and cut out the cubes. My block was thicker than expected and I got a lot of 2 to 2 ½ inch cubes. I used a towel to hold the ice while cutting. Kept my fingers from freezing and I got a better grip on the ice. Thanks, I appreciate the time you took to shoot and edit the video. I learn a lot from watching UA-cam videos.

I make highball and “mizuwari” with clear ice. I landed on your video after seeing a few clear ice videos from Japan. I actually use silicon mold with a hole in individual ice compartment with its own plastic tub that goes into insulated styrofoam basket, which you mentioned a little. I paid about $15 that makes 10 2” cubes, which I’m pretty happy with. Your method will create the best shaped for sure,. As I learned more about clear ice making, I learned that only water freezes during freezing procedure and pushes out the impurity to unfrozen part which you mentioned. So here in New York, our tap water is pretty good and soft, so I just use tap water. Clear ice tastes better for sure that highball has plenty of whisky nuance and subtlety left in the glass. I’ve been trying out with a bunch of different scotch and bourbon bottles. Sometimes with lemon or orange peel. Very refreshing and goes well with a meal. Thank you for a great informative video! I've been using this method for months and it really is the best! Great video! Btw, you should switch out that hammer for a rubber mallet. You could really damage your knife if you keep using the hammer. Also, sometimes if the ice is like 2% off from being perfectly snug (like it was in this video), all you gotta do is spin it in the glass with your finger for a few seconds. Most of the time the edges melt down enough for it to be perfectly snug :)
I cringed at the hammer-on-knife. Definitely go with rubber mallet. Also, hitting hardened steel directly on hardened steel can actually be extremely dangerous. Maybe not from such light taps, but bad habits die hard.

Brothers and sisters, I just did this for the first time and it worked PERFECTLY!!! To try it in a drink I put a couple of the large cubes in a glass of Diet Coke and they were beautifully clear and it seemed to make the Coke taste better...but maybe I’m just imagining that. I’m definitely going to keep doing this and cannot wait to use the ice in an actual cocktail or with some whiskey. Cheers mates!
Nice - cool to see a reliable method for clear ice! For what it's worth, it may be easy or worthwhile to do something like heat up a pan and press it down on the ice to remove the top ice shell or to reshape the ice if you're looking for a particular shape (triangle? icosahedron?), or heat up a cheap knife a bit to help make cutting your ice slices a bit easier. May be more trouble than it's worth, but seems like it could be a good way to quickly shape things the way you want them.
I ordered the "dew water off a unicorn" from amazon. I had to trade in my magic lamp for it.. But now i have clear ice.. lol Anyway awesome video.. i always wondered why some of my cubes that didnt freeze all the way were super clear and the frozen solid ones were not now i know. love the channel.

Great vid ! I used drink my bourbon/whisky/Scotch on the rocks, but now unless it’s high proof i drink them all neat. Once you get used to it I’ve just waters down the flavors for me. Ice is for Jack and Diet Coke!

I would score it with the serrated knife, and then use a clever as the chopping device (it's meant for that). Or just go old school with an ice pick. But great idea on making a large block in a cooler to get the clear starting material!
Whoa,, you really like your ice. Okay, I admit - me too. Seriously, very cool. I'm definitely gonna do this. I work for an Asian airline and my co-workers and I constantly complain about the ice they give us to serve. It sucks. This method really does make sense because it won't melt so quickly diluting. I'm gonna make the ice blocks, and my girlfriends and I are going to have an ice chopping party! Complete with your rocks glasses and plenty of spirits! I prefer Chivas. The other girls like tequila, southern comfort and gin to name a few. Young Asian women are only good for a coupe of stiff drinks and then,, well you know where that goes. But it's all good fun after a hard day of travel. We try to maintain simple rules. Girls only. Lol... I'll check back with you and give you a progress report.

I don't often comment to videos, but I had to for this one. This method works so well! My first try got me a dozen blocks of beautiful clear ice! The textured/shaped sides that result just add to the"cool factor" once this is in your glass with the whiskey!

Pro Tip: If you 'forget' and realize you left the ice freezing for too long, you can 'erase' the cloudy/bubbled ice from the bottom of the block with hot tap water, before cutting your cubes. Pro Tip 2: If you want crystal clear formed ice (I got a pair of Death Star spherical forms for Xmas a while back) place a support under the form, to hold it upside down (the fill hole should point down) and fill the cooler just below the level of the topmost part of the form (not high enough to float the form). The support needs to allow water to flow freely, as the air bubbles are forced down and out of the hole (or, you'll end up with bubbles anyway). This gives the form the advantage of directional freezing. Pro Tip 3: I use the cooking tray from a toaster oven (the little 'cookie sheet' deal) during the cube cutting. Set it on a towel, so it can't slide and hold the block against one side, when tapping the blade with your hammer. This prevents the block from shooting across the room, as the blade can sometimes come down at an angle.

Awesome video, thx! Not sure if anyone mentioned it below but a great DIY project for you is to put a drinking water spout into your sink just like the soap dispenser on the one side of the sink. Can install a water filter under the sink and you're in business. Just tee off the water line going to your faucet, route the new line to the filter and the filter to the new spout. You can fill your cooler much easier/faster, and you now have cooking water that is easy to access. We have the same issue with our water as it comes from a well so the sink spout was mandatory.
I've found that getting the dew off a unicorn's horn is still the best method, I don't care what anyone says.

I put them on sheet tray and let them get the freeze on them first for 30 min, then into a bag. no sticky!

As I learned more about clear ice making, I learned that only water freezes during freezing procedure and pushes out the impurity to unfrozen part which you mentioned. So here in New York, our tap water is pretty good and soft, so I just use tap water. Clear ice tastes better for sure that highball has plenty of whisky nuance and subtlety left in the glass. I’ve been trying out with a bunch of different scotch and bourbon bottles. Sometimes with lemon or orange peel. Very refreshing and goes well with a meal. Thank you for a great informative video! Btw, you should switch out that hammer for a rubber mallet. You could really damage your knife if you keep using the hammer.
Also, sometimes if the ice is like 2% off from being perfectly snug (like it was in this video), all you gotta do is spin it in the glass with your finger for a few seconds. Most of the time the edges melt down enough for it to be perfectly snug :)
I cringed at the hammer-on-knife. Definitely go with rubber mallet.
Also, hitting hardened steel directly on hardened steel can actually be extremely dangerous. Maybe not from such light taps, but bad habits die hard.
Best vid I've seen yet on the subject. You can spend the "saved" time shaping the cubes, smoothing the edges, etc.

Brothers and sisters, I just did this for the first time and it worked PERFECTLY!!! To try it in a drink I put a couple of the large cubes in a glass of Diet Coke and they were beautifully clear and it seemed to make the Coke taste better...but maybe I’m just imagining that. I’m definitely going to keep doing this and cannot wait to use the ice in an actual cocktail or with some whiskey. Cheers mates!

For what it's worth, it may be easy or worthwhile to do something like heat up a pan and press it down on the ice to remove the top ice shell or to reshape the ice if you're looking for a particular shape (triangle? icosahedron?), or heat up a cheap knife a bit to help make cutting your ice slices a bit easier. May be more trouble than it's worth, but seems like it could be a good way to quickly shape things the way you want them.
I ordered the "dew water off a unicorn" from amazon. I had to trade in my magic lamp for it.. But now i have clear ice.. lol

I used drink my bourbon/whisky/Scotch on the rocks, but now unless it’s high proof i drink them all neat. Once you get used to it I’ve just waters down the flavors for me. Ice is for Jack and Diet Coke!

I would score it with the serrated knife, and then use a clever as the chopping device (it's meant for that). Or just go old school with an ice pick. But great idea on making a large block in a cooler to get the clear starting material!

I work for an Asian airline and my co-workers and I constantly complain about the ice they give us to serve. It sucks. This method really does make sense because it won't melt so quickly diluting.
I'm gonna make the ice blocks, and my girlfriends and I are going to have an ice chopping party! Complete with your rocks glasses and plenty of spirits! I prefer Chivas. The other girls like tequila, southern comfort and gin to name a few. Young Asian women are only good for a coupe of stiff drinks and then,, well you know where that goes. But it's all good fun after a hard day of travel. We try to maintain simple rules. Girls only. Lol...

I don't often comment to videos, but I had to for this one. This method works so well! My first try got me a dozen blocks of beautiful clear ice! The textured/shaped sides that result just add to the"cool factor" once this is in your glass with the whiskey!

I use my 4 large cube silicone ice tray, just like the one you threw out to sprout my tomato plants.

Pro Tip: If you 'forget' and realize you left the ice freezing for too long, you can 'erase' the cloudy/bubbled ice from the bottom of the block with hot tap water, before cutting your cubes.
Pro Tip 2: If you want crystal clear formed ice (I got a pair of Death Star spherical forms for Xmas a while back) place a support under the form, to hold it upside down (the fill hole should point down) and fill the cooler just below the level of the topmost part of the form (not high enough to float the form). The support needs to allow water to flow freely, as the air bubbles are forced down and out of the hole (or, you'll end up with bubbles anyway). This gives the form the advantage of directional freezing.
Pro Tip 3: I use the cooking tray from a toaster oven (the little 'cookie sheet' deal) during the cube cutting. Set it on a towel, so it can't slide and hold the block against one side, when tapping the blade with your hammer. This prevents the block from shooting across the room, as the blade can sometimes come down at an angle.

Awesome video, thx! Not sure if anyone mentioned it below but a great DIY project for you is to put a drinking water spout into your sink just like the soap dispenser on the one side of the sink. Can install a water filter under the sink and you're in business. Just tee off the water line going to your faucet, route the new line to the filter and the filter to the new spout. You can fill your cooler much easier/faster, and you now have cooking water that is easy to access. We have the same issue with our water as it comes from a well so the sink spout was mandatory.
