New subscriber to this lovely channel. binged watched all of the videos when I discovered it yesterday! Decades eating plant based but always pick up a little cookery or baking tip here and every recipe no matter how apparently simple has a neat little twist. (sumac and tumeric to replace saffron, washed risotto rice to replace fluffy paella rice and don't stir so you don't get the starch making it goopy). I'm rooting for this channel to really take off. By the way - check out this mans sausage recipe!

@@terredee absolutely try it. Get the really big ones and treat them exactly like you would meat. Chestnuts in stewed cooked greens are really yummy too. Protein! 😁
@@terredee I found them at my favorite import store in pouches cooked & shelled. I have seen the same package on Amazon. They are soft, tender, and a nice natural alternative to processed plant based meats. So yummy.
This really does look good, tasty and relatively easy to cook. I’ve never heard of soaking tofu in brine and soy sauce nor have I ever cooked paella before so I’m certainly going to try this! BTW I tried your chickpea fritters and the chickpea crackers recipes. Really good and will definitely make them again. 💜
Hi Julie, So happy you enjoyed the chickpea fritters and crackers! This is my new favourite way of preparing tofu, it makes the inside of tofu taste good rather than just the outside. I think because it's usually full of fish and meat you rarely get people making a veggie one but it's definitely possible. Hope you enjoy it 💚

The tofu looks amazing. I could happily eat that just on its own! If I don't have wine to hand, I'll use the brine from jarred olives instead. Obviously, it's not exactly the same but it adds a bit of fruity-savoury complexity, which would be lacking in the absence of booze, and it's very budget-friendly.
Thanks for those two tips on the garlic paste and the saffron replacement. Here in Alaska, I can find turmeric and sumac but even if I could afford it, saffron is difficult to get.
Thank you! Yes, vegetable paella isn't particularly protein rich so the addition of tofu I think works well. Paella also usually has chicken in it so I like using the chicken seasoning on the tofu for that kind of flavour 😋
I love cooking a fish and seafood paella andvyesvi use saffron because I was given some. But sumac and turmeric sounds a good substitute. But I will certainly make this vegan version. Thank you
Yum! Officially pretty good for my first ever go at a paella 🥘. (Note to self: my frying pan isn't as large as I thought). Following the sausages, that's 2 from 2. Delicious. No fennel in any local shops (damned Unicorn Hunt!), so roasted up ½ butternut squash with the tofu and added ½tsp ground fennel seeds to the coating mix, which worked well! Tofu kebabs or brownies next?

My favourite go to meals are lentil & mushroom & veg Sheppard's pie,bean & veg minestrone, spinach & mushroom lasagna.risotto.

Good idea, I make my vegan paella with giant cashews. They play the part of seasoned shrimp. Fantastic review at my dinner party.
