IF YOU DON’T HAVE FUDGE HANDY
If you’re substituting the fudge for a ganache just scald 1/4 cup of cream or milk and pour over an equal amount or semi or bittersweet chocolate chips (or chopped). Let it sit for a few minutes then whisk together. You can add more or less of this into the buttercream It’s really up to you!
    this is from his page!

Getting ready to make this recipe for my daughter's birthday tomorrow, the most appealing thing about this recipe is the flat top cupcakes- I really want to decorate them without the icing sliding off. That controversial factor is what decided it for me. Thank you!

I made this and it is is by far the best chocolate cake ever! So moist and so chocolatey (btw, you don’t taste the coffee at all, just very chocolatey). I used his ganache recipe instead of this butter cream recipe because i personally don’t like butter cream. I added a few table spoons of brandy to the ganache and it made the ganache taste more sophisticated. If you can resist, let the cake sit overnight, the texture gets even more moist and rich after a day or two! Highly recommend this! 15/10! Thank you john!

I was asked to make the cake for my great nephew's graduation party. I used this recipe but made two for a double layer cake. In the middle I put a raspberry whipped cream with fresh raspberries. For the frosting I also used this recipe (the fudge makes all the difference). One batch was enough to frost the top and sides of the cake. I was too lazy (and tired) to make another batch for decorating so instead I made a ganache to make it look drippy all around, then I froze it so it would stay cold later. It was a big hit! Everyone said how delicious it was and my brother asked where they had got it. Even one of my sisters who usually doesn't like chocolate cake had seconds. Thanks John!

  • @rachelvirienna

I made this yesterday. I was concerned the cake would be too salty or that I had added too much coffee but it was perfect! Baked for 55 minutes. Super moist! The buttercream was more dense and wasn’t as fluffy for me as the video which was sad for me lol. I’m not sure if I under or over beat it. It was also too sweet for me. I was going to cut the amount of sugar in the frosting then ended up using the whole amount. I used double the fudge which was a good decision. I didn’t use a whole 3/4 t salt as that was far more than a pinch for me. BUT it was overall delish and was a hit to the party I brought it to!! Also I made it with gluten free flour and it was perfect.

I replaced the sour cream and buttermilk by homemade plain yogurt! I've got to say, the best chocolate cake I've ever made!! And my guests loved it too! I didn't make the frosting, though. Here in Argentina we're not used to it, and although I love it, It's a lot of fat and sugar that I can do without :) I just sprinkled confectioner's sugar on top and VOILA!!!

I just made this. Super easy to make. I was initially worried about the amount of baking soda as I normally don't use that much in other cakes, but it turned out beautifully. I also reduced the amount of sugar by 100g as I didnt want it too sweet. My cake baked in 30 mins in a wider tray and was still soft. However I had a bit of a crusty top, not too sure why. But this is such an easy cake to make, with a good frosting it will be delicious.

Viewer-sourced recipe review. This is a fantastic recipe. I made this last night, but I did not have a few key ingredients so there were substitutions galore, additionally it was not baked as originally directed. It still turned out very well. Here's what got changed due to necessity:
    1. Had about 1/4 C of veg oil, added peanut oil to bring it to the 2/3 C measurement.
    2. Did not have sour cream, used plain unflavored yogurt that I bought previously to make English muffins.
    3. Did not have buttermilk or regular milk to turn into sour milk. I used canned evaporated milk mixed with water with ratio 1:1, then added vinegar and let it do its thing.
    4. I used this batter for cupcakes instead of sheet cake. Baked them at the temp called for, but guessed at the time. 20 minutes is perfect.
Realizing that I was probably going to mess this up anyways, I threw my hands up and didn't sweat the deviations from the recipe. This recipe turned out so good, just had to come back and say thanks. It's rich in flavor, yet not cloyingly sweet. Goes great with vanilla buttercream icing. There you go, hope it helps those who may be feeling not up to the challenge of a good honest chocolate cake recipe. Those are becoming more difficult to find, btw. Hope this helps someone.
