- There are 2 birthdays in the Cupcake Jemma team this week - Sally & Sam are both celebrating so OBVIOUSLY a cake was needed, and sometimes, a single layer of deliciously moist vanilla funfetti cake, topped with silky swiss meringue buttercream does the trick!
Lucky for you guys, Sally's showing you just how to make it (we promise we did offer to make her a cake, but she insisted on doing her own HAHA!).

FUNFETTI MADEIRA SPONGE
270g Soft Unsalted Butter
270g Caster Sugar
4 Eggs
255g Plain Flour
55g Self Raising Flour
1tbsp Whole Milk
1/2tsp Vanilla Extract
75g Rainbow Sprinkles
SWISS MERINGUE BUTTERCREAM
110g Egg Whites
225g Caster Sugar

For anyone wondering about why sprinkles were not allowed to be used it was because a ruling came in after a bakery used sprinkles sourced from America which contained a food colouring called E127 which was a red dye. This ingredient is banned within the UK and would have impacted multiple bakeries including Crumbs and Dollies.

So here's a little back story, team CupcakeJemma, if you have time to spare while waiting for the oven or something; my husband and I have known Jemma before, individually and together, since she's always been one of our go-to cooking/baking experts and we both cook and bake. I haven't baked since the beginning of the pandemic as I was heavily pregnant and then just busy with the baby, who's just turned 2 and started screen time! One of her first things to watch regularly is your channel! Since we were looking for all the inspiration we could get to bake her second birthday cake. I'm glad to report it turned out great! It was a collaborative effort, dad baked the two layered cake, inspired by Jemma's jubilee cake, and I made the buttercream and frosted it. Now, while we really liked Jemma, we haven't had the pleasure of meeting the rest of the team until now. And I have to tell you, move over Jemma, Sally is the star of the show, as far as our 2 year old is concerned! While she still asks for Jemma, as the title of the show, she specifically asks for the part where Sally and Dane are called at the end of the jubilee cake video. And the studio tour is our daily morning show now.. and on this video, we have to repeat the bit where the cake is ready and Sally then says come back come back more than I could ever count! The oven fan is apparently hilarious, she loses it when she hears it. Not a big fan of the frosting part though for some reason.. toddlers, eh? Anyway, it's really sweet to find out Sally's birthday is so close to hers, which was on the 10th! So, happy, happy, sunny, cheerful birthday, Sally! Thank you all for being so lovely!

Another option for cooling a soupy butter cream is to hold an ice pack to your mixer bowl, works great, especially if you have a metal bow,!
