Homemade Tomato Sauce & Red Salsa | Canning Our Food for Winter

- Опубліковано 21 вер 2024
- Tomato processing is a much awaited event for us, from starting the seeds inside the cabin in early spring, to planting starts in the high tunnel, and finally harvesting the fruit to ripen back inside the cabin during the fall months. With snow falling and the wood stove cooking we make our annual tomato sauce and were lucky enough to have an excellent tomato yield to be able to make homemade salsa for this winter too.

While I couldn't convince my husband to move to Alaska, we finally made the move to Montana last month and we love it. Watching you inspired me to make the move to a simpler and natural life!
Where'd you leave from? I'm in North Dakota and TBH I'm hoping to make my way to the New York area. Not into the city, of course, but either way it's going to be expensive, so self sufficiency will help me save money.😌😅
Good for you guys!! While my husband and I want to go to Alaska and live this way!! Just so hard to make the move😫 hard to just let go of our comfort zone...
Welcome to Montana 😊
Don't worry, you'll be colder than Alaska at least once when that first polar vortex sweeps down and a warm front pushed it right over the top of y'all. Lmao. 🧡
@@CaDi_leE life begins outside your comfort zone 👍🏼💪🏻
You guys truly bring the wonderland to winter....it's so beautiful to watch the seasons transition in Alaska, your videos are so inspiring to me and many others, thank you for continuing to bring us along your journey❤️❄️
Someday I picture you with a dedicated canning/ pantry room added to your house. Rows and rows of earthquake proof shelves of your home canning products. Rows and rows of hanging onions and garlic. Bins of potatoes and root crops. Wow! Real riches, the equivalent of Scrooge McDuck's bags of gold.
They did an underground cold room one year but unfortunately had to scrap it because their water table is too high
@@Redsammeh
Yes, I remember. I was thinking of something with nice windows to help with seed sprouting so they don't have to live under grow lights all spring.
I was thinking of the same type of room also would love to see them up that up! One weekend! Lol!
@@baskervillebee6097 And will give them a beautiful view especially during the winter!
@@Redsammeh which was too bad because it was lovely.
so , helo folks , good food canning our food winter , nice kitchen , nice job , I do enjoy , tank you
I received my calendar a few days ago. The photography is spectacular! My compliments to the photographer. 😉 Thank you for sharing your beautiful home with us! 💖
Are there any good pictures of Eric and Ariel?
@@beeamerica5024 Beautiful landscapes and Alaskan wildlife.
I just got my calendar today! Arielle has a gift for photography - the images are beautiful. Have put it up on the wall next to my 2021 calendar so I can start enjoying it already.
I received my calendar the other day and I LOVE IT. You could be a professional photographer.Thank you for the awesome pictures of Alaska.
I don't care what anyone else says, but those are the best chips EVER!!!! Didn't know of anyone else who did that, we fry ours a bit more with more oil. Take care Kids!
For the first time in 64 years, I canned tomatoes this last summer. I ended up with 26 pints, and I've already gone through half of them! (And it's JUST November)
Next year I'll need to buy more jars! A LOT more. 🤣
Love your vids. Brings back so many wonderful memories from my youth.
I remember we had the most incredible dog, his name was Skookum. 125 pound Makenzie river Husky black Lab mix. Best dog that ever lived. Sorry but Bo and Bandit would agree. He would have been Bo and Bandit's best friend for sure. He was the uber alfa dog, bred with wolves, took down moose in deep snow, bla, bla. Saved my life from a charging (not a false) cow moose protecting her calf. N.S. She would have stomped me into mush if not for him. How many people can say that? What I remember most as a young teen was checking my trapline after school in the dark with Skook. He always had to come along at his insistence, but complained the whole way about the cold. Other than his whimpering there was the hush. The silence of the deep woods. 3 feet of snow on the spruces as I trudged along on my 5 foot long bentwood snowshoes. 25 degrees below zero. Fond, fond memories. Sparkley. Crunchy. Even a little spooky. Rabbit creek valley, in the shadow of Flattop mt. n.e. of Anchorage Alaska, 1970-1975. I was 12-17 years old. Used victor leg holds and Thompson deadfall snares. In adulthood I also used conabear 330s. You share so I share.
I hope that I am not boring you.
I saw one UA-camr use an immersion blender and completely incorporated all the skins and seeds so nothing was visible and made up whatever she decided: sauce, ketchup, salsa etc. Also dehydrated tomato skins make a fabulous tomato powder to
add to soups etc and you can make tomato “paste” from it.
I have seen that also. I get the tomato powder but I wouldn't grind up the skins and seeds and leave them in the sauce. It changes the flavor and many suffer with heartburn and a few other things. I just don't like them left in. It is worth the extra steps to process. They did use the mill for the tomatos so I think it might have been all the peppers and other ingredients in the salsa.
Do you remember the channel by chance? I love learning this stuff.. 🧘
It really changes the texture and flavour. It doesn't taste bad, and my favourite tomato soup is made with the seeds and skins on, but it's a lot of extra fibres.
Fiber & nutrients, but often the ancient ways are better for a reason.
The skins and the seeds have a chemical in them that make exacerbate arthritis & other joint pain. A little is fine, but a lot can really cause problems overtime. There is a reason they are extracted. I once thought that they add
My favorite vids are the potatoes and tomato harvest and storage.
I am pretty sure I have been canning as long as you two have been alive, but I still love watching your videos. You have a calming effect on your viewers. Thanks for never being political or letting the stressful world into your videos. Best wishes for a wonderful winter.
You must have the most healthy chickens possible. They also live a dreamlive in this magical Alaskan world of yours. 🧚♀️🐓❄
Canning is Alot of work but when you are finally all done it is SO rewarding to see all those bottles on the shelves. Thank you for showing the wonderful weather changes you guys have In Alaska. Until I watched your channel, I never realized how absolutely stunning Alaska was. I see now how people are in love with its seasons.
BO is so photogenic and a poser, lol.
When people ask me why I can my own food I just take them to my canning room or show them a picture and try to explain how satisfying it is to see all that food and know that, by the grace of God, I made that happen!! I don't have enough space to grow all the food I preserve, but when I am able to can something I grew it is an even more amazing feeling!!! I will never forget the 1st time we had a dinner where everything on the plate, but the meat which we do buy grass-fed meat in bulk when possible, was from my garden it was the most amazing feeling!!!!
UK loving the vids..
Get ready for cold winter I feel..
But don't stress over utube vids. We are all watching and enjoying 😉😎 your great videos.. keep warm and we hope all the canning foods keep you warm throughout the next few winter months... 😀😃🙂
I am amazed at your depth of knowledge on such a variety of topics-carpentry, machinery, cooking, wildlife and edibles, gardening. Are you completely self-taught? Just amazing!
I love you, I love Alaska, I admire the way you live, eat the plant, fish and hunt and the care in food conservation and the satisfaction of preparing food. The Tropicana in Alaska would survive. ❤️🥰l
Eric and Arielle, that opening shot is beautiful, and a lovely contrast to you both cosy in your Tee shirts processing the fruit of your labours! would love to see a sped up seasons change montage of your land and that around it! Continuing health and happiness to you both!
I love those fluffy big white snowflakes. Your videos are so wonderful, thank you.💖
I’ve been watching you guys since you moved to Alaska. I absolutely love watching you guys ! It’s so much fun to watch everything you do and how hard you both work ! Love from Canada ! ❤️❤️🇨🇦❤️❤️
The 2022 calendar is beautiful. Thank you for sharing your beautiful lives with us!!
The chickens got a good treat, but dehydrating the tomato pulp makes a fantastic seasoning. Dehydrate and grind to a powder for great tomato flavoring sprinkles.
That is such a neat idea 😃
That’s what I was thinking! I powder it up after dehydrating and then make it a powder. Use it in my soups.
The chickens didn't look impressed with the offering...
Your chickens sound so contented. Just gentle chicken sounds. No squawking.
I find it amazing how willing I am to spend hours watching you guys in your everyday life in Alaska. I truly enjoy it lol. Thanks for letting us share a piece of your amazing life.
It's so relaxing. And a break from what I usually watch....
Me too Love watching your videos
There's NOTHING like canning! It is work, but oh so worth it in the end.
I had a feeling that you’d post another video today. What a treat and perfect timing, I just put my daughter to bed. The snow looks beautiful!
Same😍😂 we must be in the same time zone
Some chilaquiles whit that salsa 😋!!!
Love how you use the “cooler” outside to bring the temp down on the cooked tomatoes 👍👍
The sauce and salsa look great 😋🤤
honestll viewer here.. I always criticize other videos specially if their content should be living off the grid yet their thumbnails are naked body of their partners.. but in all of your videos I really love the content what I see in the thumbnail is what is really the content of the videos.. I love the fact that you are doing what you do because of the passion of living homestead and self-reliant and posting it on yt makes me in the place where you at just by watching it... I love how true are you with each other. no exaggerated emotions from you specially Ariel she is just herself.. Eric is super hardworking and very much honest if he likes what he tasted the most... I love you guys..💯💖💖💖
Hello to both of you, I never comment on videos but I have been following you for more than 1,5 years now I think, and I absolutely love watching your content, it is so different from my life and makes me dream, also perfect content for cold evenings under the blanket. Thank you very much for the efforts you put into your videos, and I'm excited to see what you've still got to share with us :)
Cheers from France!
Wow, fresh tomatoes 🍅
It will save you a LOT of cook down time if you would drain the tomatoes after they thaw out. I do that too. Too much going in the summer sometimes so I wash cut and core the tomatoes and chuck them in the freezer till later. Draining them while they are still in chunks really helps. You can save and freeze the water you drain for vegetable soup stock or whatever...
Good idea!
I do this too. Saves so much time
@@jenniferspeers2453 Isn't it so much fun watching their channel? I love the way they put up food, kinda throwing things together and turns out to be tasty and beautiful.
I freeze mine too, but I never thought to save the "freezer water" for later use!! Great idea!!!
@@michelestarkey5564 we core and score the bottoms so when they come out of the freezer the skins slide right off while defrosting. That way we don’t have to strain - we just rough dice- and make chunkier sauce and salsa.
My husband and I moved to the rural area of Tennessee from Indianapolis. It may not be super remote and off grid, but the joy of having chickens and growing a garden is fantastic! Hoping to bE more self sufficient! My husband and I stay up late watching your videos, we love them!
I love watching your videos it is like hanging out with you two. Love the garden and food processing videos. I would never have seen Alaska without videos like yours, you make it come alive.
Y'all have no clue, pictures/video do not even come close to the real experience of being here.
I just received my new calendar and I am blown away by the photography. This is the best calendar I've had in years Thank You
Love! Lots of effort for this.
The chips sounded extra crunchy!
Made me hungry for nachos
Зима длинная и холодная ,,, все пригодится ,,,, молодцы , лайк👍👍👍
It’s so awesome knowing that you raise and can everything to have and eat through the winter, do you like tomato soup? Proud for yall❤️
I enjoy to look of falling snow...Christmas (life with Christ all year long..) what an amazing Color outside!
I just received my 2022 calendar in the mail!… it is absolutely beautiful and I’m so excited to have it thank you so much for putting this together!❤️❤️❤️
Thank you, Lord, for the food we are about to eat...with our eyes! 🤤
Mama Mia! That’s a lot of sauce! You two make it look so easy. Food security is definitely not an issue within your household….and that’s a great thing! 👍🏽
Living in Florida. I miss the north. Love you two, your pets, home and life.
The snow makes everything so peaceful. I live in central BC and am patiently waiting for our snow to come in.
Here’s to the winter!❄️🌨👍
Yumm!! And I loved the winter scene because it's up there and not here!
Eric and Arielle u both have got it going on your garden was lovely this past year, enjoy that salsa
I have been watching you guys for about 2 weeks now, I am so impressed with what you are doing over there, I am in Australia so seeing 2 young people living the way you do is awesome. Hopefully one day you might bring people over to stay then I could get to Alaska
Man I'd love to try that salsa! You guys should have a raffle! Lol Winner gets a little sample kit of all your homegrown/homemade goodies. I know I'd love some of your dried herbs! I think I had my mouth open when Eric was taking a bite!
LOL, agreed on all of that and I swear I caught myself trying to have a bite as well.
Great idea!
Probably cost a fortune to ship tho.
@@tinerea7464 If it helps support these two kiddos, I'd happily pay high shipping.
Wishing I was 40 years younger and able to return to Alaska to live as you are. That was a lifelong dream. Although knowing what I know now I would build my place using double-wall construction. Incredibly easy to heat in the winter. And your garden and canning... love it. Thanks for sharing.
Your preseason preparations almost make winter welcome! Love the snow shots of your
new leantos for your vehicles. Every shot shows the hard work and planning you put into your
life in Alaska. Never knew how many things can actually be made at home or preserved. Amazing filming showing Arielle during the canning steps. Excellent vibes !
Canning and cooking-my favorite videos!
AMAZING!! The incredible harvest you guys have put away for this winter is so exciting! You must feel so happy about your efforts :o) I know I feel glad for you just watching it happen! You have a wonderful winter to look forward to and enjoy; God bless you both!! 💖 (Just love the snow at the beginning of the video - so lovely!!)
This is the best way to preserve your tomatoes. We do this every year with ours
Your early snow video's always remind me winter is just round the corner. Sadly our views are no where as beautiful as yours.
My mom used to can tomatoes - whole- and fruit - sliced. We boiled the tomatoes briefly, dunked them in cold water and then used a paring knife to remove the skin. Super easy that way. It was long, hot, sweaty work to do during the late summer months, but we would have tomatoes and fruit for much of the winter.
It's hard work, but it's so nice to have those when you want. Great job.
Man I just know that the meal and snacks the two show on camera looks so mouth watering and delicious. It seems that all the hard work in the garden this past summer has really provided great harvest for the winter months. With the snow setting in I'm one that is looking forward to all of your winter months adventures. Take care of each other and stay safe.
We live off grid in Australia and you guys are by far our favourite go to UA-camrs for ideas and advice thank you for sharing your life it’s an inspiration
Something that might help you when cutting and peeling onions. Cut a lemon in half and rub it all over the side of the cutting board you're using. The lemon smell will draw the onion smell down. You'll never year up again. I've been doing that for years, never had an issue.
The chips look like roti, before they're cut in fours. Still looks yummy.
The price of lemons in Canada makes cry as much as the onions! He he
I will try this. I'm in complete crisis each time I chop onions. 😄
Not breathing through your nose and very sharp knives also helps.
Light a candle
When I was growing up one of my friends family cooked all their food (for canning) outside over an open fire to save on propane usage. They had a big family. They did have a wood stove, and your channel reminds me of their lifestyle. Sorry, It wasn't a lifestyle, it was a way of life. I'm so glad I found your channel it is very inspiring.
Hi April.
I look forward to this video every year! The first time I watched one y'all's canning videos it was such an inspiration and encouragement to me in my endeavors to grow and preserve my own food. Y'all really helped me to believe in myself. ❤️
just want to acknowledge the video editing and how you guys took the video the movement of the camera is quit dramatic which I like the most it gives the viewers like me a special view of what Erin is doing...live it..💖💖💖💯
Yessss!! Always love the canning vids. Can’t wait to watch.
You guys are like a food factory. Great video.
Y’all are getting very good at this videography and editing. Keep up the great work. Love the channel!
Winter Wonderland is so beautiful
The first bite, Eric.....wow. That sounded heavenly 3813.8 miles away...😁 Arielle, I can see the labels on those salsa jars..
ILLIA'S BRAND SALSA
So good, you'll see the Northern Lights.....anytime!!
How about it ??.?.?
In stores near you.😊
(We had our first frost this morning.)
You guys are awesome and your videos are so therapeutic. Love from New Zealand 🇳🇿🙏🙌
Pro tip for doing the onions: toss them into a pot of cold water as you chop the ends off. Leave them in there until you are ready to peal and slice them. It will get rid of the liquid that comes out of the cut ends and they won't be so hard on your eyes.
Another wonderful delicious video .... this is what enjoying the fruits of your labor looks like! Bon appetit Eric & Arielle ... take care.
Just made my morning at work better seeing this, thank you 😁
Can't wait to get our garden produce this year.
Nothing like hearing those jars pop
Awesome landscape. Great way to work your tomatoes.
I think the tomato processing is my 2nd set of favorites after the potato Gold digging vids.
We can sauce every year so know how much effort you put into this project but the end result is so worth it. Thanks for sharing!!!
Awe Winter! Time for you both to relax after such a busy Summer. Please keep cooking though!
Another fantastic video. Strange what you in USA / Canada call Salsa in UK / Europe that would be pasta sauce and the tomato sauce would be passata. Salsa here is much chunkier with chunky whole chopped tomatoes & onions chilli garlic not cooked just bottled and water bathed. Good too see how different countries do it their own way. 👏👍
In the USA there are several different ways to make salsa. We do have a chunky version and also a blended version.
A picture is worth a thousand words Eric your face when you were peeling those onions. That is me I use a lot onions in my food everything. I hear people say they don't like them each to his or her own.
Love watching you guys preparing for winter
I would love to see you do a video on the Spring seed starting that you do inside. You have such limited indoor space. I am curious about the lighting you use. Your starts look so healthy and you do so many varieties! Please share your expertise. I so appreciate viewing your adventure. Your youtube channel is so well done!
Nothing better to go with lunch than a notification of a new video from my favorite Alaskans!!! gonna check it out!! As always Be safe!!!....Had to edit to say I was jealous cuz my lunch sucked woulda rather been eating all those HOMEMADE chips and salsa🙂🙂
I'm new here. I very much appreciate not having to listen to music all the time. Thanks for that!
As many as y’all process every year y’all almost need the industrial size one! It made our canning season fast, six cases of tomatoes strained in 30 minutes even with the second go round with peels!
Maybe it would be too much to handle for their electric system?
Actually it doesn’t use that much power. Yeah they might have to get a bigger grinder but for as much as they put away every year it would be an awesome investment and give their smaller one a break just incase something ever happened and they need it in a pinch. But it’s whatever they’re most happy with and what works for them. I just know my parents love theirs cause we all put up so much every year. Can’t beat fresh taste I tell you that
@@michellesellars4241 I wouldnt know actually, I am far from living off grid so never had to bother with that kind of things. But I know if I had something that still works, I probably wouldnt buy a new one "just" for convenience. Im the kind of person that uses stuff way beyond their lifetime, reuses, repair as much as I can, repurpose, upcycle, recycle...it just kills me to throw things away or not use them anymore just because they're past their prime. (Im an old grandma inside a 31yo body :-D )
I completely get that. My parents are a little bit older and it just helps them process because we used to do it all by hand with a food mill. And they didn’t wanna give up something they love.
And another summer comes to a close!!
So exciting to see all your hard work come to fruition!! Amazing cinematography 💜✨
Hello! I'm a Brit who's currently living in the tiniest flat in Paris, France so whilst I can't live out my dreams of this lifestyle at the moment - I must admit that I really enjoy these sorts of videos with short little tidbits and tips that I can use in my current lifestyle and dream of a better future. Thank you so much for your videos, they really inspire me (and I'm sure many others). So excited to see what else you have to share (also don't know if you've changed cameras or something, but it seems that each video keeps getting more and more cinematic - I'm loving it!)
WOW did that look good!!!!! It's near dinner time and that was killing me. The snow shot's in the beginning were fantastic too. You really had a great tomato crop this year, when you were pulling them in out of the tunnel I was surprised at how many you got. Looked like more than double than last year. Looking forward to the next segment already!
Such a beautiful winter wonderland ❄️
Something oddly satisfying about grinding food. Damn those chips and salsa looked amazing, pretty sure I'd crush that whole plate. Awesome vid, love mater sauce and salsa!!!
