Baked Yellow Split Peas Fritters | Easy and Healthy Snack

  • Yellow split peas fritters are a popular street food snack originating from Mauritius called “gateaux piment”. They are served on their own or with bread and butter. They are usually deep fried, but this version is oven baked which makes it healthier yet delicious!
    Recipe: Baked Yellow Split Peas Fritters
    Ingredients:
    Makes 20
    150g (¾ cup) of yellow split peas
    ⅓ of a medium red onion, finely chopped
    1 spring onions/green onions, chopped
    15g or a handful of coriander, chopped
    1 teaspoon of grated garlic
    ⅓ teaspoon of baking soda/bicarbonate of soda
    1 teaspoon of salt
    1 green chilli (optional), chopped
    ½ teaspoon of cumin
    Olive oil
    Instructions:
    1. Soak the yellow split peas in 1.5 litres (50.7 fl oz) of water overnight.
    2. The next day, drain and rinse the peas. Add the peas to a food processor and pulse until broken down, leaving some texture.
    3. Preheat the oven to 220 °C / 200 °C fan / 425F / Gas mark 7.
    4. Transfer the peas to a bowl, add onion, spring onion, chilli, coriander, salt, cumin, garlic, and baking soda. Mix until combined. Quickly pulse the mixture in a food processor, still leaving some texture. The mixture should not be smooth (see texture in video). Transfer to a bowl.
    5. Line a baking tray with parchment paper. Make small balls with the yellow split peas mixture, about 1 to 1 ½ tablespoon each. Place on the tray leaving some space between them. Drizzle with olive oil. Bake for 20 to 25 minutes until browned.
    6. Allow to cool down for a few minutes. Serve warm and enjoy!
    Notes/Tips:
    - The fritters will last in the fridge in an airtight container for up to 4 days. They are best served warm.
    - Serve the fritters on their own or with bread and butter.
    - It is important to not skip the baking soda because it acts as the binding agent.
