Just made these because I’m just getting BACK into ketosis and craving brownies! This was the fastest I could get something brownie-like into my pie hole! Ty SO MUCH, this saved me!
1/2 cup unsweetened cocoa powder 1/4 cup coconut flour 1/4 cup erythritol 1 tsp baking soda 1/4 tsp pink himalayan salt 1/2 cup butter, melted 1 large egg 1 tbsp heavy whipping cream 20 drops liquid stevia 1 tsp vanilla extract 1/3 cup lilys chocolate chips US Customary - Metric Instructions: Preheat oven to 350F and line a baking sheet with parchment paper. In a large bowl, whisk together cocoa powder, coconut flour, erythritol, baking soda, and salt. Add melted butter, egg, cream, stevia, and vanilla and mix together with an electric mixer until well combined. Batter will be creamy. Use a rubber spatula to fold in the chocolate chips. Allow batter to sit 2-3 minutes until slightly thickened. Using a small cookie scoop, scoop out 20-24 mini cookies onto prepared baking sheet. Bake for 8-10 minutes. Remove from the oven and let cool completely on the baking sheet before serving. Best stored in an air tight container in the fridge up to 10 days or freeze for 1 month.

These look really good. In recipes that use sweetener it would be helpful to know the equivalent amount of real sugar needed to sweeten the recipe. That way no matter what no sugar sweetener we use we can determine the correct amount. For example, I use Pyure sweetener which is a stevia/erythrotol blend. One half cup of Pyure is equivalent to one cup sugar. Others may use a sweetener that measures one to one with with sugar, while someone else uses a combination of granulated and liquid sweeteners as you do. Knowing the real sugar amount theoretically needed keeps us all on the same page no matter what sweetener we use.

I was doing some research on using baking soda, and I found that only natural cocoa reacts with it appropriately and dutched cocoa does not (since it is neutral due to the alkalyzer added to it). I thought maybe some of the non-bakers (like myself) might need to know that. Looks good!
I used 1 c. of almond flour and they turned out great. Didn’t have chocolate chips ☹️ added some chopped macadamia nuts. Definitely need the chocolate chips. I topped mine with RX peanut butter and it was a filling snack.

They never use xanthan gum, but I add 1 tsp per cup dry ingredients, and 1 extra egg because nut flours need more structural support, especially when coconut flour is involved

FYI Lillies now makes milk chocolate chips in case you prefer milk chocolate to dark chocolate. The best price appears to be on Thrive Market at this time. I ordered mine yesterday and plan to try half this receipe with milk chocolate and half with dark. Taste test! :)
These were horrible and bitter, the only ones that were OK but not great where some I added a half teaspoon of Chia seed jam to the top. That made them barely edible
they are good, but anybody think they are a little too dry?? i've try 2 batchs with 8 min and 10 min... both are too crumbly and dry... but they are good

Did anyone have this issue, and if so, how did u correct it? I’ll probably add more swerve and stevia next time, but how do i fix this super dry situation? Lol
Carolina I tried them again and they’re just as dry. The only thing that might save them is maybe some cream cheese frosting. Also I used more erythritol and less Stevia and they weren’t quite as bitter this time. Let me know if you figure out the dryness issue please
I get the same issue with the brand from the Bulk barn. One reason I cant cook treats....I hate this cooling aftertaste and stevia gives a funny aftertaste as well. There has to be something better out there....

Either a tsp of cinnamon or a tsp of soluble instant coffee is a great trick to bring out the chocolate flavour. It is a secret confectioner's trick.

Good stuff! I added 2 tsp liquid stevia, +1 tsp vanilla, used half coco flour and half AF, no egg.

Just a heads up, baking soda is only useful when paired with something acidic. Without acidity you’re better off with baking powder.
Aaron Bailey why is baking soda used in baking anyways. I know baking powder is used to make things rise. But what is the point of baking soda?
Mindy Girl it’s an alkaline compound. When mixed with an acid it produces carbon dioxide which causes a rise in whatever you’re baking.
