Oh for sure! Honestly a big reason for SDI is that it's a little more industry standard, and you get the nice locking connectors on the camera side, which makes me feel a bit more comfortable. But fiber optic HDMI would definitely work!
The thing with sensor size is dynamic range NOT low-light performance. The latter is due to processing of the raw data the sensor is sending and the lenses what really determines low-light performance. The guys over at petapixel have noted the ~14-stop cap/limitation of M4/3 for some time (they were on dpreviewtv for years).
Do you have image magnification (IMAG) in the room? (Following the pastor around on the screen).. And if so, how do you deal with that from a mirrorless camera? Following/focusing etc?
No, we don't. We don't really feel like it's needed, and because we don't own the projector etc, we can't really make sure that it's low enough latency. But we follow and focus pretty well manually, check out our Livestream to see!
I am going to give you a tip I noticed that your cameras are laggy make sure to set your cameras to either 60i or 60p or it also could be your software your streaming with
I just learned about Fiber Optic HDMI cables. You can run 200’ no problem. I think they can go up to 300’.

I think any lag you're seeing is actually because I screen-recorded our livestream afterwards!
