I see so many people trying to clean and season their grills cold and just end up ruining them and then they give the manufacture bad reviews. Keep up the great work on educating the masses.
When you added the oil, you did not burn it. So, you don't need to season with burning the oil? Just add the oil as a barrier rather than true seasoning?
You don't need to season every time you use it. Its standard practice to just cover up with oil even for cast iron pans. Its just to prevent from rusting. Seasoning is more to create a layer of burnt fat that creates a sort of non-stick layer on the griddle. It's not required every time unless you think it needs it.
How about the underside of the griddle? I just got one used and was nasty underneath. I put it in a vinegar bath and re-seasoned the top. I but do not know how to coat the bottom or wheter is needed. Any suggestions?
I wouldn’t worry about the underside. It shouldn’t affect the way the griddle operates. The underside of mine was plenty rusty looking. If you are really concerned about it I would suggest contacting Cuisinart customer service. Hope this helps and happy griddling.
Thomas, it does come with a stainless steel lid that lets you roast, steam, warm, or smoke. I also purchased a heavy duty cover to protect it when not in use.
Both the standard and XL come with metal lids. Its highly recommended you get the cover for the griddle. Its like $30 on amazon. Its worth it to keep it dust, insect and animal free
Yes the surface will scratch up, but it’s nothing you should worry about. If you season your griddle after each use that will help protect the surface. If the surface does eventually becomes rusted you can remove the rust and then repeat the first seasoning process. I hope this answers you question.

Do not use extra virgin olive oil!! Always use a high smoke point 425F and above oil
Avocado Oil is excellent for this
Grapeseed oil as well
Flaxseed
I use canola oil.

You don’t need to fully season it after each use. Just clean it thoroughly and put a thin layer of oil on it and you’re done.

It's stainless steel with no coating, you need to season it to make it semi-nonstick.
How does soap or whatever damage the surface? Isn't it rolled steel?

I don’t believe you can purchase a replacement griddle top. You’re best bet is to contact Cuisinart customer service.
