- A Creamy Goat Cheese Pasta made without cream. A simple dish to make using a homemade pesto. If you don’t have fresh basil, you can always make it with store bought pesto. Simply mix it with the goat cheese.
Once in the hot pan, the goat cheese melts into the wine resulting in a delicious creamy sauce. It coats the linguine resulting in a shiny delicious pasta meal. Always cook al dente and don’t be shy about adding pasta water, the pasta will absorb the liquid. You want a silky shiny sauce, not clumpy. Serve immediately.

This is perfection. I love an herbed goat cheese and there is no need for adding heavy cream. I think you should have used the full package of linguine though as any of us watching it are now hungry. Hey chef wonderful dish I agree with all the ingredients... Very nice combination and very different. Have a question for you is that rock salt that you use most of the time? I use to use kosher salt but that looks a lot more attractive especially when you put it on the salmon and the meats. I also noticed that you use a finer salt sometimes in your pasta water ... Bravo my friend, this deserves a neat glass of vodka as well while I make it. You know Joel, my friend who works with me has a Husky mix and seeing Whiskey disappear with big chunks of meat reminds me of Baxter, he can eat an amazing chunk of meat in seconds, are they faster than a Great White!?!
