A twist on the classic dish using smoky pancetta, sweet peas and gorgeous crumbly goat's cheese. This dish is elegant and comforting.     Very easy to make and delicious! We think this would also work with Kefalotyri or Graviera cheese.

    Wonderful risotto, but once you make it in an instant pot you will NEVER make risotto in a pot again.

    Thanks. That's looking lovely. But I'm cooking for a family who have been coming back for 3rd helpings and want something to bring to work next day. I already got kudos for Jools & Buddy's cookies. If I'm cooking for a minimum of 5 all with healthy appetites. That risotto would be like serving a minnow to a pack of hyenas.

    Quite sure soffritto is a mixture of carrots, celery and onions ... Not just celery and onions, also never heard to be a base of any risotto TBF.

      The traditional soffritto is made of onions, carrots and celery. But, there is not only ONE way to make it. You can substitute the carrot for other root vegetables or even add other vegetables like fennel. It is the base of sugo, ragù and, of course, also risotto.

    When you cook risotto you don’t need to add the stock little by little, it cooks uneven, add 1.8 times more stock then rice and leave on a low heat stir every now and then
