  • How to make the perfect extra crispy banh xeo? This awesome Vietnamese street comfort food, banh xeo (Vietnamese crepe), is pretty easy to make. The batter is just a bit tricky at times. But no worries, in this video, I will show you the tips and tricks in making the perfect banh xeo batter.
    This batter will give you a light crispy banh xeo, but also have the gluttonous chewy interior. The technique in making it is important, but you can improve when you start making lots of banh xeo. One thing I stress most for this to be a good banh xeo, is to leave the batter in the fridge overnight. Let the flour rise and become sticky and chewy. Cold batter works very well in creating that crispy bottom and chewy top.
    If you don't have premixed banh xeo flour mix. Use: 2 parts rice flour, 1 part wheat flour, & 1 part cornstarch
    Banh Xeo Batter Ingredients:
    2 pkg pre mixed banh xeo flour (use mixture on top if you don't have pre mix)
    2-4 tblsp cornstarch (for crispiness)
    2 tspn turmeric powder
    1 tblsp Salt
    2 bunch of thinly sliced green onions (or chives)
    2 cans coconut milk
    4-5 cups of water (add water base on batter consistency) can fluctuate depending on how thick your coconut milk is.
    Mix all ingredients well, cover and let rest in fridge overnight. Ready to use next day. Mix batter up again the next day, the batter should be a bit sticky now.
    Toppings:
    Pork belly - boiled in salt water with some garlic, ginger. (10-15 min)
    - Sliced in thin pieces
    Shrimps - Peeled and devein - marinate if you want
    - salt, garlic powder, chicken granulated seasoning, black pepper
    Bean sprouts
    Sliced white onions
    Mushrooms (optional)
    Condiments eaten with:
    Mustard green leaves
    Lettuce
    Assorted Mints

    I used to usually eat banh xeo when I was in Vietnam. I worked there for more than 7 years. Now that I'm back in the Philippines, I really miss this dish. 🥺🥺🥺🥺🥺🥺🥺

    Hey Chef Q, I have a question. If we use less oil to make the dish less greasy, is it gonna change the taste of it?

      Your banh Xeo will be burnt crispy ... not golden crispy 😂 like I said in the video ... don’t eat Banh xeo if you don’t like the grease lol eat a salad 😂

    Hi chef! Thank you for sharing your recipe! I don't have premixed flour. ..you say"3 parts of Rice flour, 2 parts of wheat flour and 1 part of corn starch " but you write "2 Rice flour, 1 wheat flour, 1 corn starch"...which ratio should I select.? Thanks

    Do you have any advice for banh xeo that always tears? Mines always rips when I go to fold it. Even after I’ve let it sit after taking the lid off before folding. It just rips all the time. Not sure what’s wrong with my batter?

      🤔 either your batter is not thick enough or the batter didn’t expand. Did you let the batter mix sit at least a few hours before making it? Usually overnight in the fridge would make the batter more chewy and crisp. :)

    I use Rice Flower from the asian supermarket for the batter mix. Pork Belly has too much fat on it, which is part of the reason why it's greasy. Just go buy a rotisserie chicken from Costco and add shredded chicken instead. I use Pam instead of oil to cook the crepe. It's not as messy or greasy.

      It’s not authentic if it’s not greasy lol Vietnam literally deep fried these. They use pork lard. Of course it’s balanced out with lots of veggies and mints. If you’re really trying to be healthy, bánh xèo is not for you :( try spring rolls :)

      Cái bánh xèo đầu tiên lúc nào cũng bị hơi khét. Xem cái thứ hai vàng và giòn hơn 😊. Chảo nóng điều hơn rồi 😁

      You’ll never go back to eating bánh xèo the same way again! Lol although it’s a bit filling with the egg. 2 large bánh xèo with eggs is all I can handle 😆
