  • Came across an Indian Recipe book and decided to try out some recipes by making them for the first time and share it with everyone. We've already done a series of another book testing out gluten free treats. Now we've decided to do a series testing out recipes from a book called 'Thali by Maunika Gowardhan'

    My god this looks amazing ~ I've always held off making this recipe even though I've cooked lots from Thali, because I had the mistaken impression that it was just fried potatoes garnished with the chutney. Your video has made me think twice - and hungry!

      It was my first time trying it and was very tasty. I like when dishes have a bit of tartness to them. With the fried potatoes… it works very well. Hope you enjoy it 😁

    May I ask where that wok/pot is from and the size? And that first hammered knife?

      Hi Jason, the one I have is about 10.5 inches in diameter. I also have a smaller 8in and a much larger 14in one depending on the amount of cooking I’m doing. I found these in various Indian grocery stores. Took a bit of searching. Their main material is iron and thicker than a wok. Heavier as well. I found one on Amazon that you can take a look at www.amazon.com/Karahi-Kadai-Kadhai-Handle-Inches/dp/B08WKB9VJ9/ref=mp_s_a_1_7?crid=1RC1F51D6Z0OX&keywords=kadai&qid=1683124229&sprefix=kad%2Caps%2C159&sr=8-7.
      I wanted to find them in person because I wanted to do my own quality control check. Make sure the handles are cantered and balanced and physically feel the weight of it. Many of them are hand made so can be some differences. Neither a hood or bad thing, but allowed me to select based on my preferences.
      If you do get one, make sure you scrub it well to wash off the wax coating and then season it. I seasoned mine three times to ensure a good coating is on it since I cook a lot with tomatoes. After each use I just lightly coat it with oil again and quickly heat it before I store it away. Ensure longevity. Hope that helps.
