@@gardenstatesowandsew It takes a few months. I ended up not using mine until 6 months later because I didn't feel like it was strong enough. That was many years ago. Now I buy new beans every other year or so and just add them to the jar, never removing any. Every time my extract goes down an inch or so I top mine off so that it stays just as strong and doesn't get too diluted with new uninfused vodka.

I watched another youtuber do the instant pot version of vanilla and gave it a try. I felt it was the best vanilla of all my vanilla. I have some that has been sitting on my shelf for over a year, but smelling them side by side, the instant pot vanilla is best. One thing though, I found that it is best to let sit in the jar on a shelf for 1 month afterward. That is when it is the best. I could still smell the alcohol over the vanilla, but that 1 month on the shelf took care of that. I've also tried spiced rum and bourbon. I prefer the vodka, but know many who like the spiced rum. If you don't like one try another until you find what you like. Thanks for the video. Never would have thought of blueberry or peach, but that sounds lovely.
Hi Rachel! I have made vanilla for years, but I just buy a 1.75 liter of cheap vodka and put in 16 Madagascar vanilla beans let sit in my basement in a dark cupboard for a year...then strain put in 5oz bottles (with the beans) label, and people love it...I love those beans the best because it makes the vanilla smell sweet, so good ..no mess no fuss!

You can also take coffee beans and vanilla beans after infusing and make flavored sugar. Allow beans to air dry. When no longer moist or damp add to granulated sugar and allow to sit for a few weeks before using.
Ooo... I’m thinking these would be great in homemade chocolates. Coffee creams, strawberry creams, nut barks.. mmm. Or in hot drinks, in creamers for hot drinks... Oof...🤤😂 So many ideas Rachel!
Those are lovely extracts and so easy. I have one I just made using golden rod flowers. I added ginger, lemon and clove to it. OMG it's a holiday in a bottle.

I joined a vanilla bean group to expand my repertoire of vanilla. Different types & different spirits. I love Tahitian vanilla because it's floral & light. It's heavenly. I like that you used unusual spirits & flavors.
I just made vanilla with a bottle of captain morgan and it smells divine so i think that cinnamon you have would make a great spicy vanilla i sure would love some of that coffee one i only live a staye away lol
I started two quarts of vanilla about 3 years ago. I waited 2 years to use any of it, or to the some away. My truck is to use vanilla from one quart jar until it gets down to about 2/3 full. I then just refill it with white rum or vodka, and place that one behind the second quart. I start using from the second quart, and keep the process going, so I never run out. This year I did add a couple more vanilla beans to each jar, which I found much more affordable than a few years back! I'm planning to buy spiced rum to start some vanilla from that. I heard it's fantastic!

When I weighed mine it was not the right weight but was the right number of beans to what I had read. I'm going with it. I have started both vodka and spiced rum, but love your idea of doing 2 so you can rotate usage.
I would pour the extract from the pint jar into a large measuring cup that has a pour spout. That way you won’t loose so much trying to pour it into the bottles

Wow what a great way to make extracts! I made vanilla, coffee, chocolate, lemon, orange the old fashion , wait for ever way last year but this is so much easier!!!! Think this will be my go to way from now on- no more shaking and waiting!
I've never tried coffee or vanilla in vodka but we have a habit of creating different extracts of plants (both grown and foraged) and then we mix our own schnapps with them. I especially like to flavour vodka with bog myrtle. And right now I have a batch of sloe gin going.
You could throw the cinnamon stick either in you 2nd round or just put it the bottle for the look like coffee & vanilla beans. I'm gonna try doing it that way next time, you probably get a stronger flavor of what your extracting. Great ideas as usual. I gifted a small amount of the vanilla bean you taught me to make to a baker friend of mine for her birthday, that would be a great gift of variety pack of extracts. You so smart! 🤣🤣
Last summer I made a 1/2 gallon of vanilla(we use it in everything!) using Capt Morgans. I split my Then used Ever Clear to make cinnamon & peppermint from our plant. Plus a 1/2 gallon jar of vanilla sugar(put a lot of beans in it) & probably added at least 8 pounds of sugar to it. Made cute baking baskets for gifts.
Did you find the Everclear overpowers the vanilla flavor? I used that for my vanilla extract (started in February) and it’s so strong it overpowers the vanilla flavor.

I've been brewing several different vanilla beans for over a year. So yummy. Some in vodka, some in rum. (Madagascar,, Indonesian, Tahitian, Ugandan, and Sri Lankan). I use Grade A beans and use 1 oz of beans to 1 cup of alcohol for a single fold. Want to try to make almond extract which I hear you make from apricot pits.
I've made kahula, chambord, blueberry, amaretto and other flavored infusions but using the instant pot is new to me. I definitely am going to give it a try making some lemoncello from dehydrated lemons. We have mainly used ours as after dinner cordials and mixed cocktails.

You just solved my many years of mold problems when I infused vodka with peppers, garlic and onions for Bloody Mary's! It always molded after a few months. Duh! The water content of the vegetables I was adding! Should have used freeze dried! Thanks for the video!

My vanilla extract is - I had to stop and think, really old. lol I don't remember how long I've been putting vanilla beans in a mason jar of brandy. I don't slice them, that way you can't 'milk' them after they absorb all the goodness for whipped cream, etc. The flavor is insanely delicious compared to any commercial brand. Although I've long forgotten what commercial brands taste like. Enjoyed your video even though I don't own an instant pot you gave me an idea to infuse some coffee beans in Tennessee Fire I've had for ages!
Great video. I have never made extracts before but want to try. The other day I was in a thrift store and they had the dark color flip jar in which I bought. I have been collecting flip jars for a little while but rarely find the dark color. Definitely going to try some of these extracts.
I use Madagascar vanilla beans with a good bourbon to make my vanilla. It’s very yummy! I’ve not done other extracts but I might try a few. I’m not sure what I would use them for though.

I think the peach would’ve been good with the spiced rum. Coffee extract to make Kahlua😊 Might have to bribe my daughter into doing a extract day using her Insta pot. I have some questions - after the required time to "steep" can the beans be removed and reused to make more? If they stay in the container do you need to occasionally add more vodka? Thanks! I don’t have a freeze dryer but I have a dehydrator. Would that work when putting fruit in it? Or dried fruit you can get in bulk? Only they would have added sugar. I have never tried to make extracts before so I don’t know what options there could be. Thx! This was fun to watch. I will have so much fun trying it.

I tried orange extract by using orange peels. It came out delicious.

The fruit ones make excellent glaze on fish, particularly Blueberry and Raspberry on baked Halibut and Cod.

We make vanilla, vanilla paste, cinnamon peach extract, strawberry and mint extract. We love them for baking and all that kind of stuff!!
You could use the blueberry for Moscow mule along with the peach!! Yumm

I have some questions - after the required time to "steep" can the beans be removed and reused to make more? If they stay in the container do you need to occasionally add more vodka? Thanks! ( Even though I live in a small cottage and not a homestead I really enjoy your videos).
If you're not going to pour off in another jar sans beans then yes I'd add a bit to it as it is used

This was a fun video full of inspiration! I wonder if you have to use swing-top bottles. Most extracts come in a small screw-top bottle. I can't wait for some videos where you share how you have used these. Thanks, Rachel!
Oh you certainly don't I just know alot of folks prefer them and hate to see anyone go out and buy brand new when you can get them at resale

I don’t have a freeze dryer but I have a dehydrator. Would that work when putting fruit in it? Or dried fruit you can get in bulk? Only they would have added sugar. I have never tried to make extracts before so I don’t know what options there could be. Thx! This was fun to watch. I will have so much fun trying it.
