  • Have you ever wondered how to make vanilla extract and vanilla paste? In todays video we look at how wo make vanilla extract as well as vanilla paste.
    My beans are from Indri Vanilla bean co-op that can be found on Facebook. When ordering through this group the orders are pre-orders and cost a little less than retail.     Vanilla extract:
    1 oz of beans to 1 cup of alcohol*
    *Alcohol needs to be at minimum 35%-60% alcohol / volume or 70-120 proof, higher proof alcohol needs to be diluted.

    Great video! You mentioned the beans can mold if not submerged. Do you add liquid when you're using, to always keep the level of liquid up when making vanilla extract?

      This is the best part!!!! Just decant your extract to another bottle then re-use the beans for another extraction or us them for vanilla paste, or dry them out and make vanilla powder from them! Personally I would suggest using them twice for an extraction then after that I would use them for their final purpose. A lot of people also keep what is called a "mother bottle" which is just basically a big jar that you keep adding beans (and alcohol) too. In that case you would just decant a small amount as needed.

    Hi Rebecca, thank you so much for this video. I've been on the fence for a while now as to whether to make the paste, and you gave me the intestinal fortitude to finally try it tonight. I watched your video about 4 times, and it was amazingly easy! I did use my Vitamix, and did let it blend for a good while, however I still notice tiny bits of fibers, presumably from the bean itself. I did not see you strain it, as I have seen in other videos, have you ever strained it, or do you use it as is? My home smells absolutely divine, and both my dog and I are in beany heaven! Thank you again!

      Hi Mary! I’m so glad that this video helped you!
      I do leave the little bits in it. I use the past in making things that it doesn’t matter. I used it in the balsamic peach jam that I made in the video that I will link below. If you look closely at the jars in the thumbnail, you can definitely still see the bits. You don’t notice them at all when you are eating it though. ua-cam.com/video/KweMcFVeoSc/v-deo.html

      I don’t know if a good substitute but you can simply leave it out, you will just need to stir the paste before using it as the vanilla seeds (called caviar) will sink to the bottom. If finding it is the issue, I have a link to it on Amazon in the description of the video.

      I will use whatever bean they have available through the co-op. I haven't had a bad bean yet! I have a comparison video coming out tomorrow where I compare the three different paste recipes that I have tried! I was shocked by the results!

    thank you for sharing this recipe! could i do it without the alcohol? if so, do i need to supplement it with something else?

      It can be done with vegetable glycerin. You will use 1 oz of vanilla beans to 3/4 cup vegetable glycerin and 1/4 cup water. Shake often. I’ve made it and it took quite over a year to extract to a flavor that I enjoyed. Vegetable glycerin tends to have a shorter shelf life, so check the expiry date before you buy (if you can). You want the furthest date out that you can find! Two years seems about the max.

    I must give this a try! Especially knowing it can sub for eggs in baking. Do you think maple syrup would be work as well as corn syrup?

      I don't think so. The corn syrup is meant to prevent crystallization. Maple syrup won't doo that.

      It looks like you probably can, but to be honest, I'm just not sure. I would try it with a small batch just to be sure.

    Can you substitute the corn syrup for something else? I also second another video for vanills coffee syrup

      It’s my understanding that the corn syrup is being used to keep the paste from crystallizing, so I think you can substitute for a little lemon juice.

      I've never used a Ninja, but from what I understand you can buy them with different power levels. From what I gather, the more powerful ones do a fine job! Maybe cut the beans up fairly small like I did.

    Rebecca, do you sterilize the bottles before you decant? My vanilla has been brewing for 28 months and it’s ready to be bottled. Thank you!!!

      I wash them, but I don’t sterilize. The alcohol won’t allow bacteria to grow. Ohhh, your vanilla extract must be AMAZING!!!!

    Am I right in my belief that you measured everything by weight? Or are some of the ingredients by liquid ounces as in a cup, half cup etc? I am mainly questioning the vodka and water. Thank You, great video.

    What’s the point of the liquor? Can corn syrup by substituted for vegetable glycerin?

      The liquor is the preservative. I don’t think corn syrup is a good substitute for glycerin in this case.

      It should be twice as flavorful, it MAY be thicker, but not necessarily.

      How did you taste it? Vanilla will always taste super strong on a spoon. Try adding a drop to a sugar cube or even just tsp of sugar. Alternately, make a little whip cream and add a couple drops.

      It seems pretty shelf stable, but I’m not sure exactly how long. This particular recipe was written by a professional and he has stated that it’s been on his counter for over a year with no negative effects.

      It can be stored in the pantry. Thats where I keep mine. It’s been a year and a half now and it’s better than ever!

      I don’t think you can buy a “wrong” kind of Vanilla beans. I always buy whatever the co-op is currently selling. I haven’t had a bad one yet.

      Sure! I can’t see any reason why you couldn’t make half. I wouldn’t do that for myself as I use it a lot! I’ve used almost half of it since I made this video. I’m exactly sure how long ago I made this video, but I think it’s been a couple of months now.

    Is that distilled water, tap water or filtered water...or does it not matter? 😝

      I have a whole house filter on my water, so I used tap water, but that is filtered. I’m sure that the more neutral tasting your water is the better it will be! Personally I am happy to use my tap water for almost everything, including this recipe.
