  • potato and cauliflower cooked in North Indian style
    Aloo gobi is a dry vegetarian Indian side dish made with Aloo (potatoes) and gobi (cauliflower) mixed with spices and stir fried.
    Aloo Gobi, Gobhi Aloo, Alu Gobi, Aloo Gobi Masala, Potato Cauliflower Curry

    Ingredients
    1/2 tsp amchoor pdr
    1 number cauliflower, cut into florets
    1 bunch chopped coriander leaves
    2 tsp coriander powder
    1 tsp cumin seeds
    1 tsp garam masala
    1 tsp ginger-garlic paste
    1 tbsp gr peas
    2 number green chilli
    1/4 cup oi
    1 number onion
    4 number potatoes, cubed
    1 tsp red chili powder
    to taste salt
    3 number tomatoes, chopped
    3/4 tsp turmeric powder
    Directions
    • Heat oil in a pan, saute cumin seeds, ginger-garlic paste for a minute and crushed tomato,onion and gr chilli and add turmeric cook till oil ozzes out add rest of spices mixed in water
    • add poatoes. and cauliflower
    • Also salt. Fry for few minutes.
    • Lower the heat, cover and simmer for about 15 minutes until the vegetables are cooked
    • serve hot with naan , chapati , roti

      India has 40% of its population as vegetarians.. others also eat vegetarian food most of the week days.. when an elephant survive with vegetarian food any body can.. don't worry that your child has to eat veg food only.. you too try for it and really it's good for health and body..

    I'm going to try and make this tomorrow!
    I think Indian cooking is the key to helping the world since it has a very large variety of vegetarian dishes, and vegetarian eating can help solve many climate change problems

      Boris The Blade : ya, spices are healthy and transform otherwise boring vegetables. However the let down especially with restaurants is the oil. At home you can adjust. Most oils used are highly inflammatory oils: soyabean oil the worst. If you must Ghee is the way to go next coconut oil. Ghee is fantastic with this dish.

    12 years later and this recipe is still going strong - a huge fan of your channel - have made many of your excellent recipes. I want to try this preparation and just need to get the correct quantities to make the spice mixture (concoction)... you emphasise quarter teaspoon but clearly add a lot more - please, please clarify how much of each spice we should use so that the end product does justice to this lovely dish.

    Hello Chef!
    On this day, I prepared aloo gobi, in the style you have mentioned in the video. Love it so much. All these years I prepared the same dish in a quite different way.
    But today I tried your way it came so yummy😋 everyone in my family enjoyed the recipe. Slight change I made, instead of aam powder I added 5 ml of tamarind pulp, because you have mentioned in the video aam powder is added for sourness, so I thought why not tamarind pulp.

    Today an expert attested what I learnt in my 10months of cooking experience.. Easy to make a tasty non-veg dish but you need lot of patience and experience to make vegetarian dish taste great.

    I made this and it's absolutely delicious ! Definitely will be a staple for me, since cauliflower and potato are so cheap here.
    We don't have amchoor powder here, so I used lemon juice instead. Add it together with the spices and let it evaporate slightly, then add the (prefried) potato & cauliflower. I just omitted hing and kasoori methi as they too are not available where I live, it's still absolutely delicious. I did use the prefrying technique ;)

    does anyone else think he reminds you of Martin Short?
    i tried this recipe twice, my first try at really any indian food. i found that it took a LONG time to get the potatoes soft enough to even think of eating. like, an hour, easily. and LOTS of water. also i found it confusing when he says, "add a quarter teaspoon of....", and he is clearly adding a half cup! but i understand he probably ramped up his demonstration to feed the TV crew/audience/whomever
    anyway, great instructional!

    This is my favorite dish. When I first started cooking because there were no Indian restaurants in California, USA and could hardly find any Indian food recipe book. I invented my own extremely easy recipe. Make a bed of thinly sliced onions,;few pieces of garlic in a pan with or little or without oil. enough so food won't stick. Pour cut Cauliflower florets and potato pieces on top of onions. Sprinkle all the spices evenly on top of Cauliflower and potatoes. Turn on medium heat and cover. After 2-3 minutes, mix the contents. Cover again and let it simmer for 10 minutes on low medium heat. Mix once or twice. Low medium heat is the trick.The spices won't evaporate. The steam from moisture in the onions and cauliflower will cook. Don't add water. If you add water, Cauliflower and potatoes will become mushy and will lose their shape, firmness and consistency. Sprinkle with Garam masala ad thinly sliced ginger and Cilantro. When my father came to visit me in California. I made this dish. While eating,he told me it was very tasty and looked at my mother. My mother with a fork dug around the dish to investigate and told me don't put too much garlic and she was right. You must put spices and garnishing in just the right proportion. One spice should not dominate the taste. You should try and experiment different amounts and combination of different spices and write down for future reference. Putting lot of spices is not going to make it tastier and would confuse your taste buds.The Chef is right. You should personalize each dish and put your signature on it.

    Great video! This and your Chicken 65 video are what got me into Indian cooking here at college.
    I should mention, since I'm a bit large/slow/unwieldy, that as a time-saving measure I like to skip the tomato/onion chopping part in favor of using some pico de gallo salsa. Works pretty well I've found and saves a few minutes.

    LOL, I love Sanjay! He has such a great camera persona. His enthusiasm really comes across.
    Tip -- one ingredient that is used in the dish which was unfamiliar to me is called "Hing," also known as "Asafoetida." The last ingredient that Sanjay mentions whose name might be hard to understand is called "Kasoori Methi," commonly known in the West as "Fenugreek."
