  • Traditional Tuscan Italian Homegrown Tomato Passata!
    25 to 30 Tomatoes, Core/top removed, quartered.
    1 Onion, Diced.
    5 Cloves of garlic, Sliced.
    A good amount of fresh basil Maybe 10 leaves, chopped.
    1 sprig of parsley and oregano, chopped.
    S&P to taste.
    Hot seeds to taste.
    EVOO, enough to cover the bottom of your pan.
    Process the tomatoes by covering with water. and bring to a low simmer until they are soft.
    Run them through the mill using the larger holed strainer.
    Run again using the smallest hole strainer to remove any remaining skin and seeds.
    Sauté the onions until they are soft, add the garlic, hot seeds and herbs, cook until fragrant.
    Add the processed tomatoes to the cooked onion, garlic and herbs.
    Cook over low heat (low simmer) until it is thick.
    Season with salt and pepper.

      Hello, Thank you for watching my video. This wasn't really supposed to be a recipe because you get different results depending on the tomatoes that you could use. However I went ahead and posted the recipe and technique. Thank you!
