Since 1974 i have sharpened my knives on the stone the handle end first.He does it point first! I will try his way next time,difference will be neglicible i think. :-)
sharpening the steel the way you cut into your project is a way of refining the edge to micro finish.. The micro grooving in the steel going away from the cutting action is a minor but noticeable difference in cutting edge performance. The edge seems to stay longer as well from personal experience.
There's a Casino Resort on this Reservation so I imagine there's a profit sharing plan for everybody living there. So now I will leave and go to KFC to buy my dinner. I have no stories or lessons. Just money I earned to drive there and go to the pick up window. It is very tasty chicken though. I enjoyed the video because I too have cold smoked Atlantic salmon and its a time consuming method, but its really fun a rewarding. Shalom.
