I don’t think I’ve ever been as frustrated when recipe testing as I was when it came to trialing out an eggless vanilla cake! 😂
Well, I can laugh about it now, because after some drastic changes to the methods I was using, I finally came up with the perfect eggless vanilla cake! It is soft, moist, flavourful and you wouldn’t have a clue that it didn’t have any eggs!
INGREDIENTS:
- 2½ cups (330 g) flour - regular, all purpose
- 2½ tsp baking powder
- ½ tsp salt
- ¾ cup (185 g) yoghurt - regular (not Greek), room temperature
- 1½ cups (300 g) white granulated sugar
- 1½ tbsp vanilla essence/extract
- ½ tsp baking soda
- ½ cup (113 g) unsalted butter
- ¼ cup (50 g) unflavoured vegetable oil - I use canola
- 1 cup (240 g) milk
Bake at 160 °C (320°F) with the fan on for 28 minutes, or until a toothpick comes out clean. If you don't have a fan oven, bake at 175 °C (347°F).

@@pripaf1 i didn't freeze it because I am not a professional baker this is my to bake for my family and I don't frost it consume as it is with tea or coffee very yummy cake it is 😊
This is the best recipe for an egg-free cake. I finally made a cake for my daughter, who is severely allergic to eggs and never had a normal birthday cake. She is 17, and she never cared for cakes because they all tasted weird egg-free - until this one. She almost ate the entire cake. Thank you from the bottom of my heart!

OMG this cake comes out yummy i today bake this,i use whole wheat flour instead of all purpose flour and reduce the quantity of sugar because I want sweet cake and it's very tasty thanku so much for this eggless recipe because we are vegetarian 😊 your voice is so calm and you taught very nicely thanks from India 🙏

Thank you so much for this recipe, I followed your instructions exactly, and the only difference was I needed to leave the cakes in the oven maybe 15 minutes longer than you suggested, for the toothpick to come out clean. I’m not sure why that was (I had to use spring form pans maybe that affected it?) but I am sure that the cake turned out amazing, and was an absolute hit! You made my child’s birthday extra special with this wonderful recipe. Thank you so much. My husband thought I was crazy to try making an egg free cake and he’s VERY picky about food and a great cook himself, but when he tried it he complimented this cake several times, so I know it was definitely good!!
