Guga has missed his calling. His production techniques are better than many cooking shows. The music he finds and uses adds to the experience of his presentations. His story lines are good. His voice coinciding with his inflections are very good and germane to the topic at hand. Guga is generous with his knowledge and experience, basically doing these videos for free that in my mind is the best aspect and shows a positive character. Too many want to charge money and nickel and dime one to death because they think their name and likeness lends to knowing it all. Contributing to the common good is the best of humanity that is often times disgraceful and evil. Finally, another point I'd like to make is that it is apparent Guga came from humble origins: people that throw away food or waste food fail to realize the evil of doing so. Guga always suggests great tips to "use it all." I don't know Guga, but he seems worthy to befriend which I have done "virtually" on this channel. Please don't change Guga and continue on your path.

You can get electric smokers for fairly cheap prices man. Lot cheaper then they use to be. I've got new ones, but I still use my ol trash can smoker my uncle give me years ago. It's old and ugly, but there has been some amazing stuff come out of it

This will give the sauce a more gravy like consistency and will help it to stick to the meat really well.

My grandmother used to make organ meats specifically for sauces... heart, kidney, liver, etc... she would cook them and then cut them up and use them for sauces. And I'm telling you, she made the best sauces in the world.
Up until about 20 years ago lamb was the least expensive meat at the market. Now it's one of the most expensive. Guess shoppers finally figured out that lamb is not mutton.
Maybe it is just where I live at in the states, but typically lamb is about the same price per pound as better quality pork...so typically cheaper or close to the same price as your cheap cuts of beef.

A good idea I’ve done for beef cheeks was to smoke and then finish by braising to make barbacoa. Beef cheeks are the traditional cut for barbacoa. It was fantastic
Down south in South Texas,we call beef checks Barbacoa.Usually it’s eaten in a shredded taco form.I would recommend trying it,it’s absolutely delicious and very easy and common to make
Guga!!! Try to smoke the heart again but this time you should soak it in a saltwater solution for 48 hours (minimum) using a 10/90 salt to water mix. Let it dry in the refrigerator for 24 hours and then smoke it untill it is cooked FULLY through. You are not supposed to eat a heart medium rare, it doesnt taste as good as if it was cooked well done. Im a rare/medium rare guy myself but i always smoke my heart until it is well done.

I use beef heart in making Beef and broccoli. You can cut it thin and brown it up and it stays tender.
