I normally study recipes and make it my own and stray from them but I've never had to do that when I follow your recipes. Irish Guinness stew wrapped in pastry. making his filling with years and its always a hit can be served with pastry, potatoes or spice it up and serve with rice or potato chip's(fries)
This looks delicious. Seriously I would just take the filling and put it in a bowl. Tip: If you have two pie pans the same size you can use that to blind bake the pie crust.
I was thinking the same, it might not make it into the pastry stage, as I’d have so,e thick crusty fresh bread, butter and I’d be eating it from a bowl or plate too, although I’d omit the mushrooms

I subscribe to your website so I don't miss out on any recipes, and your recipes for Chocolate Cake, Christmas Cake and Beef Bourgignon are my go to recipes now. I've printed them off and keep them together in a folder in my kitchen, and they're very well used. I started making the Beef Bourgignon yesterday actually, because spring is here in Melbourne, Australia, so this is probably my last chance to make it before the weather gets too warm to eat beef casseroles. The beef, carrots, onions and garlic have been marinating in their red wine all night, so now it's time to start cooking it. The only thing I do differently to you in this recipe is I toast the small amount of flour that you use to thicken the gravy, and this gives the flour a lovely nutty flavour and aroma. I just put the flour on some foil (although you can use a tray) and then I place it under the grill for a minute or so. You have to watch it because the flour can burn easily if it's left for too long! I am forever grateful that you left your old career in high finance behind and decided to be a Chef, you were meant to do this, I'm sure of it. I hope you and Dozer are flourishing, well and happy. You can't go wrong with stout, it gives such a deep flavour...red wine is always a winner with beef too... I'm sure whichever you choose it will be yummy
If the pastry is store bought, do you still have to blind bake it? Also, just curious to know why you used two different pastries for the top and bottom😊
1. Yeah you still have to bake it, otherwise it'll get soggy. 2. The different pastries get different textures when cooking, but it's fine to change them if you prefer a specific type.
They’re pastry balls, you use then repeatedly, as they’re not a food item, they just keep the pastry from riding up as it cooks. As an alternative, you can put another pie dish of the same size on top of the sheets of baking paper or some other type of weighted item (that won’t explode in the oven of course. You can buy the balls in any homewares shop or online
@@a.s.6685 as someone from England, I completely agree with you! Years ago I slaved for hours to make a lasagne and homemade garlic bread, first thing my brother-in-law did was douse it in tomato ketchup 🙈 how I kept calm I will never know lol

It did not really work out i guess. After so much time in the oven beef had to get dry and the sauce would not save that. I doubt that is a tasty meal, more like take a picture and have McD later…

Good video. I find Guinness a bitter beer to use and I opt for a sweet stout instead adding a bay leaf to the mix to get some contrast in the flavour.
