- You're going to love absolutely everything I'm making this week. How do I know? Because you asked for it! Yep, it's Reader Request Week here at Everyday Food: You wrote in on Facebook, Twitter, and UA-cam, and now I'm whipping up the dishes you wanted to see me make. Plenty of you asked for lightened-up comfort-food recipes and foods with "hidden" veggies that even picky eaters would like. This mac and cheese fits the bill!
Sarah's Tip of the Day:
The base is pasta mixed with broccoli florets (there's your hidden veggie) and the sauce is made from olive oil, onion, ground mustard, flour, and a lighter cheese trifecta: Neufchatel, which is naturally low in fat, plus extra-sharp cheddar and grated Parmesan, which are so flavorful you don't need to use that much. Some low-fat milk makes it creamy, while toasted panko breadcrumbs give the casserole a nice crunchy topping. Total Time: 45 minutes
Serves 6
Ingredients
Salt and pepper
1/2 pound short tubular pasta, such as cavatappi
2 cups broccoli, cut into florets, stalks peeled and thinly sliced
1 tablespoon olive oil
1 small yellow onion, minced
1/2 teaspoon ground mustard
5 tablespoons all-purpose flour
5 ounces Neufchatel cheese
3 cups 1% milk
1 1/4 cups grated extra-sharp cheddar cheese (5 ounces)
1/2 cup grated Parmesan cheese (2 ounces)
1/4 cup panko breadcrumbs, toasted
Directions
Preheat oven to 350 degrees. In a large pot of boiling salted water, cook pasta 3 minutes less than package instructions. Add broccoli and cook 3 minutes more. Drain.
Meanwhile, heat oil in a large pan over medium-high. Add onion, 1/2 teaspoon salt, and ground mustard. Saute until onion is translucent, about 4 minutes. Add flour and cook, stirring, 1 minute. Add Neufchatel, 1 tablespoon at a time, stirring until incorporated. Gradually whisk in milk, then bring to a boil. Reduce heat and simmer, about 3 minutes, stirring constantly. Stir in cheddar and Parmesan, then add pasta and broccoli. Season with salt and pepper.
Transfer to an 8-inch square baking dish and bake until bubbling in center, about 25 minutes. Sprinkle with panko, and serve.

Recipe Makeover!
A serving of mac and cheese can pack up to 800 calories and 40 grams of fat. We whittled those numbers way down by subbing 1% milk for whole and creamy Neufchatel for higher-fat cheeses. Broccoli adds substance and vitamins.

Yes, I am addicted to Annies shells. My grandaughter has been eating them and when I last baby sat, I made them for her and promptly ate what she didn't. Memories of her father came wafting up from the pot! But I plan to make this recipe for my husband and myself really home made is better.

I'm Australian and we do have boxed mac n cheese but it's not so commonplace. I've never heard of anyone eating it for meals, it's more of a snack to us and we have smaller boxes. I've always had homemade growing up, my mum adds a little bit of Dijon mustard to hers and it's fantastic

When I was a kid I would usually eat the box because my family didn't know how to cook but occasionally my grandma would make homemade mac and cheese and that was always a treat!

When I was a kid we bought the box Mac&cheese, but even at 8 I would add a bunch of real cheese to that orange powder. It was really extra tasty.

To hide veggies for the kids I grate the onion and if I need chopped bell peppers in something with tomatoes or sauce in it I use red peppers instead. They blend right in. They cost more so I buy them on sale and chop and freeze them.

How is this lighter than regular? Except for the cream cheese?
Good recipe! I would prefer if she didn't let her pasta "die" and by that I mean, not allowing the pasta to sit in bowl and get cold cold. She should be making the cheese sauce while the pasta is cooking. That way, you just add the pasta right to the sauce when it's done. By letting the pasta sit out, the cooking process has to start over again when you put it in the cheese sauce.
I use to let me pasta sit while I finish cooking my other ingredients but it makes a huge difference to me in taste when you add it while it's hot to whatever it is that you're cooking.
Other than that, I loved this video.
The Box Flavour is salt, salt, salt,....must have lots of it if you want to compete with the kraft dinner.

I made this recipe with gluten free fresh pasta (maninis) and a gluten free flour blend (pamela's). I COULDN'T TELL IT WAS GLUTEN FREE AND I ATE IT UP! Not even regretting I ate half the dish myself LMAO

That's a big no to "used to the box. I've had box Mac and cheese maybe 5 times in my life and not a fan. I've always made it from scratch. It's not that big a deal. I like adding the broccoli though.
