    Ingredients for 2 servings:
    150g red lentils
    1 carrot, diced
    1 onion, finely chopped
    1 garlic clove, minced
    750 ml vegetable broth
    1 tbsp olive oil
    1 tsp cumin (ground)
    1 teaspoon dried thyme
    Salt and pepper to taste
    Preparation time: 10 minutes
    Cooking time: 20 minutes
    Preparation:
    1. Heat the olive oil in a large pot over medium heat.
    2. Add the chopped onion and garlic and sauté for 2-3 minutes until translucent.
    3. Add the carrots and fry for 2 minutes.
    4. Add the lentils, cumin and thyme to the pot and stir well.
    5. Pour in the vegetable broth and bring everything to the boil. Then reduce the heat.
    6. Cover and simmer the soup for 15-20 minutes until the lentils are soft.
    7. Season with salt and pepper and serve.
