  • Ingredients garlic mayo
    - 2 cloves garlic, grated finely
    - 2 egg yolks
    - 300ml olive oil
    - Juice of a lemon
    - Salt to taste
    Method
    1. Place all the ingredients into a tall jar.
    2. Using an immersion blender, start at the bottom and begin to mix, and slowly move to the top to emulsify the oil into the yolks. Take your time or it will split.
    3. Season with salt, and done!
    Crispy calamari
    - 4 tubes of squid, cut into rings
    - Juice of 2 kiwi fruits
    - 200g flour
    - 100g rice flour
    - 2 tbsp old bay seasoning
    - 1 tbsp salt
    - Oil for frying
    Method
    1. Place the squid rings into a bowl with the kiwi juice (kiwi contains a natural enzyme that helps to tenderise the meat).
    2. Mix and set aside for 20 minutes.
    3. Mix the flour with the old bay and salt.
    4. Heat the oil to 170c.
    5. Dust the squid in the flour, shake off any excess and fry for 3-4 minutes or until golden brown.
    6. Season with salt when you take them from the oil and serve with the garlic mayo.

    I had a relationship like this except I was the chef and he was the babe. We had great fun and joy. He passed June 2021 after 37 years. I miss his laughter most. Y'all are a delight to watch and help me not feel quite so sad. Thank y'all for posting!

      ⁠@@MrAdBountyit’s not just that. Frying the Thai basil (different than Italian or “western” basil) releases the flavour and gives it a textural depth to the dish. And because it’s cooked the taste isn’t as strong, but the scent it gives off really brings all the appetite to the table :) a lot of our appetizers uses these kinds of fragrant spices, and we call them 開胃菜, which literally means “open stomach dishes”

      Fried curry leaves are an extremely common topping for fried food, usually pakora, in India. It has great aroma and flavour.

      I think if using hand blender, it should be slowly from the bottom, then gradually upwards

      @@athmaid its not a citrus fruit but has vitamin c in it. I believe that helps in the process.

      @@koushikchakraborty3000 I wasn't saying it's a citrus fruit, just that it could be substitute as it's pretty sour especially if unripe. But yeah apparently kiwi does have a meat-tenderising enzyme like bromelain in pineapple and papain in papaya, it's called actinidain

      You can also make it in a “regular” blender or a food processor - I’m getting DH a newer immersion blender for a belated Christmas present, our is a relic!

      Haven't tried, but maybe you could use a cheap french press (removing the mesh first) if you want to do it by hand.

    Reminds me of the time I deep fried mashed potatoes squirted from a piping bag. Best fries ever. Had to add egg to keep everything together but it went fine.

    I'm not a good cook, but I am picky about calamari. I used to work the fryers at a sports bar. I would always fry them for 30 seconds in clean oil and they'd be tender and delicious. Fun memories of running around a busy kitchen counting out loud to 30 while the other cooks were like "that's a weird guy."

      Well all mayonnaise is a emulsion of fats and oils, eggs and oils you can use almost any oil to make homemade mayonnaise..😮😅

    Thank you for sharing your perspective and disrupting the echo chamber. What’s a little surprising to me is just how many women can’t seem to decipher when they’re being patronized to and blatantly disrespected versus being shown “tough love”. A stranger on the internet does not know their audience personally or well enough to have the capacity to be in the position to give anyone “tough love”. How so many readily conflate love with abuse is frightening and confirmation that dissenting opinions are absolutely necessary.

      absolutely mate. In Azerbaijan, we do indeed marinate our protein, especially for bbq w kiwi juice, sounds weird but works perfectly. We say “ as soft as cotton”

    Putting kiwi on a squid? I wonder what it tastes like?
    On a side note, I like how sir Andy used lemon juice instead of vinegar to make mayo. Seems delicious.

    No kidding I was just at the store last night and seen large calamari rings just like this for the first time in my life, I didn't know you could but them so big, and ironically the next day Andy makes this video. I want some now arrghhh.

    That looks great. I used to manage a well known seafood restaurant in Sacramento and that looks like something I would have loved to.done for the bar or a group at dinner. With New Years coming up I may do this tonight at home

    Glad to see Old Bay is enjoyed in other parts of the world as well. It's possibly one of the greatest seasoning blends ever concocted. Especially for seafood.

    I had to rewatch to make sure I saw what I think I saw 😂😂 I wonder what the kiwi juice does to the squid ? Either for flavour or tenderising I’d have to guess

      It will soften or tendering the squid

      Kiwifruit contains a tenderising enzyme called actinidin, which can be used for short meat marinades, although you should be sure to keep the marinade to around a half an hour or else the meat can become mushy. Just as pineapple contains bromelain and papaya contains papain, all enzymes which can be used in marinades to tenderise meat.
