Yeah. Sadly people don't know how to properly cook an omelette. But you know what is scarier, cooking them in front of a group of people. I have to do it every weekend and been doing for a very long time. Still nervous. And why it's hard to get a replacement person. The thing is it's not just a Skill, it's the Equipment and the Eggs that make all the difference and even how you whisk them. Hell, I use a Chinacap to get the eggs whisked just right and it removes the Chalaza. But I'm also cracking 15 dozen eggs to start with.

Also the risk of salmonella from eggs is overblown. When eggs are contaminated its usually the outside only from cross contamination. The virus is rarely passed from chicken to egg
