I had Omerice 2 times in Japan at highly rated places and it was just ok. It’s hard to just make eggs and rice taste phenomenal no matter the seasoning so I don’t understand the hype. It’s more like humble comfort food but the presentation is the star so it seems superficial.
Where are you getting you chefs certification and which disciplines have you studied or you just go to a culinary school in the US and you call yourself a "chef" by job title instead of profession.

The first one is a basic omurice, though getting the correct internal temp and consistency may not work well with American eggs. Works better with eggs outside the US, though. As I understand it, it's a difference in storage. Also, it's my understanding that scrambled eggs are generally more runny outside the US.
These are fully cooked. Just not overcooked. And you can make a normal omelet, but it wont split like the one here. As far as the tornado one, I think you can? It might just be harder to do.
What's more important - the designs or the fact that it is well well-cooked and palatable….I am thinking about the design for them but for me, it's how well-cooked it should be.

Everyone eats their eggs differently. People eat there eggs that way all the time. Just because you wouldn't eat it like that doesn't mean that it's not cooked enough for someone else. My mother likes her eggs cooked all the way through, I prefer mine soft, how they are in this video actually.
You realize with that amount of heat they're no longer raw? It's no different from sunny side up or over easy eggs. Egg yolks take very little time to cook at that temperature before solidifying completely.

I've noticed Japan and Korea like their omelets with plenty of uncooked scramble inside espically for "omrice" (probably a better name but I learn from anime 🤷♂️)
There was a Michelin star chef who once said, when I interview a new chef I ask them to make an omelette, you can tell the skill level of any chef by that simple test, these are extremely skilled
Yeah. Sadly people don't know how to properly cook an omelette. But you know what is scarier, cooking them in front of a group of people. I have to do it every weekend and been doing for a very long time. Still nervous. And why it's hard to get a replacement person. The thing is it's not just a Skill, it's the Equipment and the Eggs that make all the difference and even how you whisk them. Hell, I use a Chinacap to get the eggs whisked just right and it removes the Chalaza. But I'm also cracking 15 dozen eggs to start with.

Eggs in Japan are safer to eat than other places in the world. It also depends on how you ate growing up throughout your life. Also, as long as food reaches a certain temp it is safe to consume. I just do not think I can handle the texture lol. The art in this is is amazing. So pretty

Also the risk of salmonella from eggs is overblown. When eggs are contaminated its usually the outside only from cross contamination. The virus is rarely passed from chicken to egg

As a 9 year old I asked for my eggs “medium rare” once. Every one laughed and laughed while I was trying to figure out why it was funny. As an adult, I ask for my eggs “dead” 😂 I don’t want runny yolk. If there’s even an inkling I have a hard time stomaching it.
