Beautiful presentation. This is an interesting take on the technique of making chai. I usually steep the tea, spices and milk all together in a pot and sieve off. I also crush my spices in a mortar and pestle. It is interesting to see other ways do doing things. Thanks.

Sometimes I do 1:1 ratio of chai to vanilla flavoured soymilk. I steep the tea and then milk together in the pot with some sugar/honey for a while and pour it into the french press and that will also give you a tonne of foam.

I couldn't afford all the ingredients to make this, so I bought a Bolthouse FARMS version and I love it :D Tastes like the rice pudding my grandpa used to make me, when I was a kid.
Assam is usually used to make Masala Chai :) Also ( i know its not just you Byron) but What do people call it Chai Tea? Chai means Tea and the spices used are called Masala hence Masala Chai ( Spiced Tea)
I don't know if you have tried kashmiri chai before, it's really delicious but hard to find, so would love to know you're take on the recipe if possible?
