Our family lives in Jersey and last time we were there, we got a fresh sald that was out of this world. Instead of tomatoes, it had a lot of sweet red pepper strips. Fresh mozzarella cheese slices, and 3 or 4 fresh grilled eggplant slices also. It had Romaine and iceberg lettuce chopped in it. Forgot the dressing, but hubby and I shared it. ❤ It was so delicious. Next trip over, we will get another salad. Scale of 1-10, it was 10+
Peppers are great on eggs. Poached or scrambled or easy over. Inside burritos, in casseroles and just by themselves. Drizzle with balsamic vinegar for a change. Endless possibilities.
Oh me too! I miss growing my food! I love her face when she looks at her stuff growing! I was always like that, SO excited when things were ready to go. It's such back breaking and tiring work, but every year I couldn't wait to get started!! Those good old days!! Hard work and a beautiful pantry 💞💞

I bet that olive oil would be very good in spaghetti sauce or any marinade. I just love the kitchen ideas you give us, I have been cooking since I was 12 years old. There is a great chicken recipe I use roasted red peppers for. It has cream cheese, garlic, roasted red peppers, chicken stock, basil, and red pepper flakes. I found it on Pinterest and it takes 30 minutes or less. A family favorite!
I once had a delicious salad that had beautiful greens, then had roasted fingerling potatoes, roasted red peppers, roasted garlic, and goat cheese. Divine!

Sarah, we love pasta with sun-dried tomatoes or re-dehydrated tomatoes, sauteed onions and garlic, roasted red peppers, the oil from the roasted peppers or olive oil, butter, parsley and lots of parmesan cheese.
We stuff ours with rice ,beans, taco seasoned meat /chicken, or beef, and cheese of choice after roasting and cleaned then bake till stuffing is hot and cheese is melted. Delicious.

Sarah, I have 12 ajvarski pepper plants in my garden this year, started from seed. I've grown them every year since you introduced them to us. They are just so beautiful and delicious! This year, now, near the end of August they are producing very well and I wanted to try roasting some of them but wasn't sure how to preserve them for my tomato, basil soup this winter. I have never roasted peppers before but just the thought of buying those expensive jars again this winter was enough to make me want to try. I just knew if I came to your channel you would have the answers I needed to have the confidence to try it. You were right on! From picking to going into the freezer, every step of the process. Thanks so much for your very easy to understand, thorough teaching methods on whatever subject you are teaching about. I have watched you for years and watch every day a video is coming to invite you into my home again. There used to be a diner in Massachusetts that sold “Moon Burgers”. I have no idea why they were called that- but the burger had a big piece of roasted pepper and a slice of purple “Bermuda” onion. Delicious!
I char my roasting peppers right over the fire on my stove burner making sure they are completely blackened, then I put them in a light cloth and wrap that up in plastic bag..... learned that from Views on the Road UA-cam, she cooks a lot of authentic Mexican foods

Love this video! Even tho' I'm not Vegetarian or Vegan, I' ve had a sandwich in a restaurant with roasted red bell pepper, and portabello mushroom, thinly sliced red onion and hummus rather than mayo. Season with Italian herbs and salt and pepper. It is unbelievably good! Now I can make my own!

sarah good job sweetie just a tip when you are roasting the peppers the skins need be black all over so u don't get some that don't peel or you can use your roasting basket that your fryer has to roast your peppers and chilie peppers and you wont heat up your house :D
Those peppers are absolutely gorgeous, I'm pea green with envy. 🤩 As for the leftover oil, I'd recycle it by putting sliced onions in it, along with a jalepeno for spiciness, put it back in the frig and let that marinade for a while. Yummy.
Oh my this is the thing I will be trying. I spend a fortune on the peppers in the store and they are packed in water, not oil and they only last a week in the fridge. You can put these in anything. Spaghetti sauce, chili,macaroni salad, any salads at all, omelets. The oil, stir fry with the infused oil, Yum Yum, the possibilities are endless. Thank you for sharing this!
I would imagine that pepper/garlic infused oil would be great to brush on top of a focaccia Sprinkle some fresh herbs, onion and very thinly sliced garlic, and you have a bread fit for a king. Yumm!

Save the skins and dehydrate them, then whiz in food processor to make a paprika like powder for sauces ,stews and soups. Ie Hungarian goulash

I would use the oil as a basis for an oil and vinegar salad dressing
Ooh! And whatever you trim off save, grind in a mortar and pestle, place into an old/used spice jar and use to spice whatever, when cooking.

Another use...make sausage potato soup with spinach (or kale) and diced roasted red pepper. We call it Christmas soup
