    Made this yesterday. Amazing. I actually shared a shot of the marinade with my wife and it was sooooo good. The pork turned out great, and like you said, the brightness of the salsa makes the dish come together. Thanks Tom. Well done brother.

    Even though this channel is just advertising of the products they sell, this is still the best culinary channel on YT.

      I mean, he took one minute out of a 20 minute video in order to advertise some things that would make a humongous recipe a little bit more manageable. I don't think the claim "this channel is just advertising of the products they sell" is fair, especially regarding their recipe videos.
      There are VERY popular channels (such as Wisecrack) which devote 3 minutes out of a 8 minute video about movies to advertise a mobile game. I am perfectly fine, even thankful, for the kind of advertising atbbq does.

      That's the beauty of smart advertisement. You managed to see only minute of advertising, but there was more (during the whole video, no only at the end). Sure this was more about cooking, then advertising itself (apart of their informercials), but I guess they live out of selling stuff then the videos itself. Still best bbq chief on YT.

      I understand they promote other things on their channel as well, but I don't consider that as advertisement. Saying what rub they are using, what smoker they are smoking on, etc are things that people will ask in the comments anyway. I understand they sell these products in their shop, but that doesn't make it an advertisement, in my eyes. Other channels that do not have their own respective shops are very explicit about where they got their cuts (T-Roy comes to mind), what seasonings they use, etc. I don't think its fair to call an act an advertisement when there potential gain in it, but not when there isn't.
      That's my opinion though.

    Hey chef tom, my dad and I love watching your videos. We've been using foil for our ribs and meats up here in Canada and wanted to try butchers paper but everything up here is all waxed coated. Any suggestions on where to get nonwaxed or websites ? Thanks ..we've looked everywhere.

      Oh yeah! You will want the butcher to cut your steaks nice and thick, but it would be awesome to stuff a steak with this mixture.

    I lost my head with that salsa verde recipe i was like thats not how you make it . sorry im mexican haga but still a nice idea

      Mexican too, and there are several ways to make Salsa Verde. Most people make a boiled version but the roasted version (most offten served chuncky) is fantastic with the flavors taken up a notch. Even though he is cooking it on the grill, I often make mine either in the oven or atop the comal. This is a gourmet version of Mexican cooking. He is taking some traditional Mexican flavor and "taking it up a notch."
