    I tried the recipe and it was fantastic. I elected not to use beans. Using my smoker, i ran it without the water pan and while the chicken was smoking and sort of grilling, I placed the peppers on the top shelf and smoked them too. Into zip bag to sweat and off the skins, This addede more smoke flavor to the chili. I can vouch...this is decadent...wow what flavor...amazing. My wife liked to use white rice in bowl and add chili...interesting pairing. Absolutely our favorite chili. Thanks! Been a subscriber from the beginning, but my first recipe I used.

    Just made this today and it was amazing. I was on the fence about white chicken chili for awhile after having creamy beam water at one too many potlucks but this was hands down better than most traditional chilies I've had before. Keep those recipes coming!

    I made this tonight...oh my goodness! Decadent doesn’t even describe it. Amazing but unless you have a big group cut the recipe in half. You can only eat one bowl it is so rich. The tortillas are a must. Thank you Chef Tom!

    Hey chef Tom, I always add some dark, or Mexican chocolate in the last few minutes of cooking my chili. You will never notice a chocolate flavor, but adds another depth of flavor dimension. Just a technique I thought you might appreciate. Love the channel, love the videos. ATBBQ has become my favorite supplier.

    I've made this several times now and it's a pretty flexible recipe. You can use green peppers instead of pablanos if the grocery store is lacking in selection. Technically you could even make this with a chuck roast or shrimp if that's all you had. Literally making this again today. Thanks for the great recipe!

    I'd like to see u do a tortilla soup or Mexican gumbo. I've been watching all ur videos. U do it exactly how I'd like it to be done If I was doing it myself. Ur a hell of a chef.     Made this last night it was a total hit with the family! I used poblanos instead of Anaheim chilies ( what I could get) obviously didn't have the same seasoning on hand but made our own carne asada ...pretty good would like to try the eight second ride though and with Anaheim chilies.

      BBQ is still cooking, only an American would think you need to be fat to cook good food. It's kinda sad because 40 years ago, US portions were a third of the size they are now. Obesity capital for a reason! Plenty of good and not obese BBQ chefs all over Germany, Italy, Spain etc

    Chili this is not. BUT this is one of the most incredible recipes I have ever tried. This is a winter time staple for our family. I literally just did a double batch of this to give to family last night and if you are on the fence about trying it...don't be. It's absolutely amazing.

      A roux is usually made of unsalted butter.

      He primarily uses unsalted butter but once in a while he will use a little bit of salted butter and will make note of it
