      Hi Scott. We USUALLY do prime rib for Christmas although we have done ham and turkey on occasion. I live in upstate NY so it can be pretty cold here around Christmas but I will fire up my Oklahoma Joe offset and cook the PR on it. Merry Christmas to you and yours!!

    • @scott729
      @scott729 5 років тому

      Back at ya Mark. I used to have an offset and have cooked a lot of prime rib on it but I got rid of it when I moved to Ohio. Im down to only a traditional Weber kettle now, I have my eye on a Big Green Egg. Sorta torn on what to get, the weight is a bit of a holdup for me.

    Love learning from you chef. Thank you for sharing your knowledge. Just wondering if there's a reason you didn't add all the ingredience to the horseradish creme fraiche at once? Would that effect the thickening or flavor at all?
    Thank you again.

    Choices for putting the fat back on the prime. Butter, lard, beef fat rendered(what was cut away to get to the silver skin),olive oil and combinations of the above.
    Btw I love the fact that you PULL it at the proper temp of 105°.

    Should always salt it and put it in the fridge to dry brine over night with a piece of meat that thick. It will ensure the entire body of meat will be salted from outside to in the center.
