    FULL RECIPE:
    Serves 2
    Preparation time: Less than 30 minutes
    Ingredients:
    6 Eryngii Mushrooms, ‘pulled’
    1 dozen small potatoes, halved
    1 regular size bottle BBQ Sauce
    3 TBS beer
    2 soft burger buns
    Fresh parsley to garnish
    3 tbsp ‘pork’ seasoning blend (sage and onion)
    1/2 tsp Salt, flakes
    1/2 tsp Cracked black pepper
    1/2 tsp Granulated garlic
    1 tsp Vegan butter
    4 Tbsp Sunflower/veg oil
    Directions:
    Pre-heat the oven to 200c (fan) / 275f convection or 400f bake.
    Shred the mushrooms by running a fork along the fibres, away from the cap. Pull apart with fingers and place in a large bowl.
    Add BBQ sauce to small bowl and whisk in splash of beer (optional).
    In the large bowl of mushrooms shreds, add granulated garlic, ‘pork’ seasoning, salt and pepper and toss to coat evenly. Heat cast-iron pan on med-high heat until hot, add oil. Add seasoned shrooms and cook until brown on all sides, stirring occasionally. Once the mushrooms are hot and crispy, transfer them back to the bowl and add BBQ sauce, stir to coat evenly. Place sauced shreds onto parchment lined baking tray, spread out evenly and roast for 10-15 minutes until browned and caramelized and cooked well, stir mid way if needed to evenly cook.
    Place the halved potatoes into large bowl, add a touch of oil, salt, granulated garlic, black pepper and toss to coat. Add additional oil to the hot skillet, then add the potatoes in face down to brown and cook for about 3 - 4 minutes. Turn over potatoes, they should be crispy and golden brown on the flat side, then place pan in the oven and roast for 10-12 minutes until potatoes are done, when you can pierce with a fork easily.
    Butter rolls lightly on each open faced side and place on hot skillet for 1 -2 minutes to grill until golden brown on the bottom.
    Assemble sandwiches. All the extras, optional!

      @@DerekSarnoChef I've tried this two times now, but my mushrooms come out a bit chewy. Any advice to change that or am I doing something wrong? I really like this recipe & want to keep making it.

    I love the fact I can use the same bowl, cutting board, knives, etc for prepping everything I want to eat for that meal without worrying about issues from animal products, contamination, etc. I also love the fact that it is no biggy if something is slightly undercooked. I mean what is the worse that will happen with an undercooked plant? A bit tough? Not going to poison yourself!

    Being vegan for the 1st 15 years of my life I thought it Would be harder going back to being vegan but it's really easy. I'm 30 now being vegan for 2weeks now I feel the healthiest I've felt in 10 years

    Came here from Gaz’s channel. I’m glad to find a pulled pork recipe without jackfruit because I’m not really a fan of the olive taste but I love mushrooms. Great swap!

      @@JayBoooks jackfruit tastes a bit salty/fruity to me but after you drain/rinse/smash the pieces and seeds, mix in some BBQ rub on them, a couple drops of liquid smoke and a splash of tamari and let them marinate for a bit before you cook them with the sauce and they'll taste more meaty... better yet, mix the mushrooms in there too with the jackfruit and then you'll have the best of both worlds. 😎

    So this was delicious! I left the mushrooms in the pan a bit longer (didn't bake) and then added it to a wrap with Lettuce , rocket leaves and some vegan mayo. This was one of the most delicious thing I've ever made. Thank you! 🙏🙏🙏

    I made this last night. It is fantastic and super easy. So good...I've made vegan BBQ before with jackfruit. It can't compare to these king oyster mushrooms seared on the cast iron skillet. Hats off to Derek. He is doing great things!

    Derek, I have been "vegan" for 2 months and this is by far the best thing I have had that reminds me of meat. I live in a very small rural town in Kentucky but I found these mushrooms at an Asian market near me. They get them one time a week. So I tried this tonight paying close attention to the times you mentioned and the seasoning. It was awesome and this will be a regular for me. I also found some blue oyster mushrooms and will likely do those tomorrow night. Thanks for your contribution.

    Hi Derek - awesome work you are doing - love this channel - I was at the checkout in my local Tesco's here in the UK and stocking up on Wicked Kitchen Oyster Mushrooms (a much longer shelf life compared to others) and the checkout lady, who was super nice, commented on how nice they looked and that she could not get her two children to enjoy the meat substitute she uses (begins with Q - no prizes for guessing) - next minute I'm raving about your pulled pork method, pointing to the Wicked Kitchen label and telling her all about you being the Tesco innovation chef - she had no idea - I spent a while telling her your brilliant method and then realised I was holding up the queue who seemed very interested, so I got a bit embarrassed and cut it short - but she did not know about Wicked Kitchen and she works there!     Just made one. With beer and buttered bun ) Tastes amazing! I was also lucky to find organic King Oyster in the shop (i'm in Ukraine now, obviously that wouldn't be an issue having a Wholefoods (or Tesco for that matter) around the corner. I didn't expect them to have King, was going to settle for regular oyster, but i was in luck, i guess. I'm really crazy about organic, so the fact that they were really cheered me up :) Thank you for the inspiration!

    Try rice bran oil. It's thicker like the consistency of melted fat, and it takes on the flavours beautifully. 😉 Also it's high vitamin E, which is good.

    I made stuffed peppers last night with shrooms smoked tofu and roasted tomato rice. Tried to make my own chorizo spice mix. Seared the onions @ shrooms with no oil . It wasn’t from a recipe, inspired by Derek I winged it. It was super delicious!

    I absolutely love this! I'll definitely try it out tomorrow with oyster mushrooms. I hope it's similar to how you showed it, I mean I'll try to fork them apart but I guess I'll have to cut some of those tops in slices too. I don't have an oven though, so I'll just fry them some more in my cast-iron pan. Thank you so much!
    And by the way, I love that you included a bit of Bob Ross, because you are so similar to him! It's very relaxing to watch you cook. :)

    I made this using another Sarno video version that had me dry season the shredded mushrooms and bake them first, then pan fry with the bbq sauce. I then used my brand new Smoking Gun with hickory chips... I did half with/without the smoke and-whoa. Mind blown with the added layer of flavor with the hickory smoke! I also used the other Sarno trick from the cookbook of soaking my red onions in ice water for five minutes and my 3 yo daughter ate a whole sandwich all by herself. Two thumbs up-thank you for all you do as a Plant Pusher!

    Okay folks, hold on to your iron skillets.... Went to Tesco this morning and got all the ingredients for this. Made it for my wife and myself as a late lunch. Wow, Wow, Wow, Wow, Wow. Totally brilliant. As a dedicated omnivore, I was sceptical that this would hit the spot as a replacement for real pulled pork, but any doubts I had were quickly dispelled. I did not miss the meat at all. Another advantage of this is that I put in together in about 30 mins, whereas real pulled pork is a 3 - 5 hour marathon. I cannot praise this recipe highly enough. For reference I used Sweet Baby Rays BBQ sauce and Old Speckled Hen beer. Well done guys. On the strength of this recipe, I’ve ordered a copy of your wicked healthy cookbook.

      Wicked Healthy, you are most welcome. One question. What are your thoughts on swapping out the plain white rolls for either a ciabatta or perhaps a wholemeal roll? I like to bake bread and think that a seeded wholemeal roll would add another dimension to what is already a terrific dish.

      @@LadyDivine mine was chewy too! I found that if you bake them first, with only seasoning until every piece is crispy, it won't be chewy.

    If adding garlic of any kind (minced/granulated/etc) I constantly stir my pan to prevent the garlic from burning. As long as the temp is higher than the temp used to simmer with a lid on.

    Holy crap! I just tried this and it blew me away. I was expecting mushrooms coated in bbq sauce which I was so fine with cause I love mushrooms. This tasted soooo bbq and had a chewy texture like meat. I couldn’t even taste mushroom. SOOOOO good. Everyone needs to try this!

    Made this yesterday. Super yummy even found Elvis Juice in Ann Arbor, Michigan! I probably over cooked the mushrooms in the cast iron pan as I was trying to get some brown on them - they turned out quite chewy, rubbery. I #'d Wicked Healthy with my IG pictures. Thanks guys - love your stuff!!

    I made the barbecue pulled mushrooms for my dinners, exchanging the potatoes for green beans and asparagus for low carb diet. This is absolutely delicious. I had to stop myself from eating the next day’s meal! You’ve gotta try this!

    I am absolutely in love wit this recipe! I have tried it with king oyster mushrooms, enoki and oyster mushrooms. The first two are great but with oyster shrooms is so so.
