Maybe monsanto is killing that crop too?
well I'm Hispanic and I enjoy authentic and Americanized versions of enchiladas. I wouldn't mind trying this bc sometimes it's hard to come across the necessary ingredients for authentic sauces or other times I don't have enchilada sauce on hand. looks delicious

Just make traditional meatballs using lean ground beef and ground pork, about a 70/30 ratio in favor of beef, and instead of adding Italian seasonings to the meat/breadcrumb/egg mixture you add taco seasoning or a combo of chilli powder and cumin. Brown the meatballs in a skillet or for a few mins in the oven and then finish in your crock pot with the enchilada sauce poured over them. Easy-peazy.

Different variations of how to make enchilada sauce. I make them with Chile California. never thought about using tomatoes. I'll have to try it.
I use Chile California , boil with tomatoes and Chile serrrano .. blend with a piece of small garlic and onion ..salt&pepper. --- must try Laura 😋👌🏻!
