Headphones help me tune out & turn off when things arent going great. I made soup the other day too. Cooking is a nice was to feel grounded again and enjoy some scent therapy. Nothing like smelling of onions, celery, and garlic. Mmmmmm.😋

I just want to say a very quick shout out to THE FREY LIFE family. Thank you so much for my sweet new “tea mug”! I chose the one with the cacti and saying. Adorable!! Also you two have become a very important part of my daily life routine. I have struggles in life like everyone else especially now. But even though Marys days are tough you give us the ok to say to ourselves it’s ok to say I have an illness. And yes I’m having a bad moment but I do have good ones too. My husband of 47 years always has my back. So thank you so much for being an important part of my life. Love to all! Kaydie

Mary, once the broth comes to a boil, lower the heat to simmer and put the lid on, otherwise the liquid evaporates. You'll have a little more broth in the end. Your soup looked good! Xo

Please know we can wait for the mugs. We understand certain things might not be available during this time. I'm in Michigan and I'm grateful for the stay at home order. The more people who are able to stay home and not work the less this virus will spread, and more people will stay safe. Praying that you guys stay safe and healthy. Forever Grateful, Well said! I have family in MI, and for some reason...I don't think they are on the same page. It's frustrating to know that people are not taking it more seriously. I wish they understood that we need to 'flatten the curve'. Keep spreading the word!!

I’m on day eight of social isolation.
It’s hard as I don’t have any family near, but I think I’m doing great on my own.
When you boiled your stock, lots of the water evaporated making it concentrated. Your two cups worth would have had loads of flavour.
Your garden is really good size so you can get loads of healthy outdoor fun without leaving home ({:-)

Have you tried “Better Than Bouillon”? It’s a concentration paste, and it’s yummy. It comes in several different flavors. I always have chicken, beef and ham in my pantry. The chicken and deef are great in soup/stews and the ham is perfect for green beans. Give it a try, I think you will really like it. 😋

GVGIRL Technically, I’m not sure, but I use the beef and veg ones, and to my taste, they absolutely do. If you just taste a dab of it, it doesn’t have that horrible salty bite that bouillon does. It has more brothy, meat/veg flavor than salt flavor.

For years I’ve made my own broth, this is what I do~ I keep a storage baggie in the freezer & every time I have veggie scraps like carrot ends, onion skins like you said, celery leaves & ends, potato peels, garlic scraps etc., I put them in the storage baggie in the freezer. On a side note- I only do this with organic veggie scraps b they are t sprayed with chemicals. When I need another batch of broth, I put some frozen scraps in a soup sock, boil it for abt 20-30 mins, put the scraps from the sock into the compost (not the potato skins), and freeze the broth in mason jars until I need it. Delicious! Easy! Quick! Healthy! Cheap! Organic! Less waste!!!

Also... my tip would be use a stainless steel lg spoon ... let the lg stainless spoon cook in the pot with a glass cover on pot to lessen the evaporation of the soup... continue to use the same lg stainless spoon to serve... I keep my soup in fridg the same way it was cooking on stove... taking out to reheat some as needed...
always keeping the original batch in fridg continuously...
I m hoping you and Peter continue to recover.

I think the answer to what is chile, depends on where you live in the country. I live in New Mexico. As I watched you make the chile, the other day, my thought was, "Where in the world did she learn to make chile?" Then I thought of how my mom, who grew up in the midwest, used to make chile. In New Mexico, it's taking chile pods and making sauce out of them, and we have green and red chile.(depends on how long its left on the plant to ripen) Our restaurants always ask us if we want red, green or Christmas(Combination of red and green Chile) on our enchiladas, burritos, tamales, etc. We also have chili beans, which is pinto beans with chile cooked together. We also have carne adovada, which is usually red chile with chunks of lean pork cooked in it.
However, midwestern chili is kidney beans with tomato sauces and beef.
It's all something that can be called "Comfort Food".

Chili in its simplest form derives from the Southern parts of Texas, and Northern Mexico. The dish was created by women who would prepare the dish for their vaquero (Mexican cowboys) husbands after long days/nights out on the prairies of Southern Texas/Mexico etc..
As a native Texan I can assure you that the dish Chili is often infused with other cuisines or dishes on the regular. It's no wonder Texas' state dish is a big bowl of "Red", or Chili as we call it. Farmers and Cowboys added Brisket, and beef to it as it expanded into the Southwestern parts of America, and of course throughout Texas. Its comfort food in a sincere form, and. a dish that's always welcomed on any cool/cold day. Chili Con Carne (with Beef) is prevalent in Mexican and Tex-Mex cuisines. Rich, robust in flavor with dark red tone. Perfect for burritos, enchiladas, or as a sauce for meats. Beef being the primary use. If you ask me, I add beans to my Chili, but traditionally there's no beans. Strong use of Cumin, Cayenne, Chili Powder, and Tomato.

My Nana is passed away, but had one of the best recipes for chili in existence, and she was a Georgia girl her whole life, so could be southern? I’m thinking possibly more Tex Mex? Not sure. I tend to think of the Southwest when I think about cornbread and chili.
Glad you guys are feeling better. ❤️

  • @marilan8154
    @marilan8154 4 роки тому

Chili is cowboy food! The cooks used to throw whatever they had into the pot and made it into a sauce and there you go. So pretty much it’s Texan and anywhere they had cattle ranches and cattle drives. I’m sure other places have something that’s pretty much the same but called something else. I use frozen veggies for soup a lot of the time, unless I have fresh ones. I kinda think the frozen ones hold up better so they don’t get as mushy.😀

Hi Mary... I think you have good ideas with soup ingredients. I would like you to consider this..
When cooking soup especially with meat the utensil choice isimportant
The wooden spoon holds bacteria when you stir then set it on a plate say then reintroduce bacteria back and forth to the soup... true the boiling kills it but it s almost done you re reintroducing less cooked soup to the finished product...

Mary, as can probably understand- I am EXTREMELY nervous 😬 and full of anxiety with everything going on with this Coronavirus. I’m just so beyond troubled in my mind, etc. I am praying 🧎‍♀️, constantly praying. I have gotten down on my knees, I have GIVEN all my worries (or tried to) to The Lord🙏🏼❤️, I am so overwhelmed and I just want to be ok and the people I love to be “OK”. And of course I just want EVERYONE to be okay... including •YOU• (you and anyone VERY immune compromised of course.. I have asthma so I’m considered immune compromised but I’m especially PRAYING 🙏🏼 hard for you). What scriptures or bible quotes or tools regarding God can you give me during this time? I know you are so very very religious and faithful in our Lord.
Ps- I also wanted to share with you all that as of Saturday night (Corbin, the man I told you I started dating 4 years ago) asked me to marry him😍😄🙏🏼♥️💠💍- I am ENGAGED Mary! And we do have a date!
If you want to reach out to me regarding bible versus, etc- you can email 📧 me at: Laurenmelissa97@yahoo.com.. also PRAYING for your healing Mary. Soup 🍲 looks great, making some cabbage soup for sure tomorrow! Love and VIRTUAL hugs to you and the kitty and that Ollie Boy♥️♥️

I think some people are generalizing the word quarantine too much. “Shelter In Place” or “Stay @ Home” are what governors of states are telling their citizens to do. Quarantine is when you’re told from a medical stand point because of contact with another infected person is known or suspected to stay home and or away from anybody

Kelly Reed, Sort of surprises me with all the 'nightshade' veggies used, which commonly causes increased inflammation. Sort of along the same vein as drinking milk. Even though milk does not increase mucus production, it can absolutely thicken mucus (making it more difficult to expectorate). Just doesn't encourage the best balance within an ailing body.

I love the flavor that a bay leaf adds to soup. Just remember to remove it before you serve it.

R in our family we leave the bay leaf in and who ever winds up with it in their bowl gets to make a wish! 😉
(Of course we don’t eat it)

Yes I thought Mary grooms Ollie when not feeling well. And soups just plain comforting especially the steam from it that rises. I use my garden tomatoes in my soups. I freeze them whole with skins on. The tomatoes then make my soup taste like there's sugar in the soup.

You know what a really good soup too is, lasagna soup, also chorizo sausage really adds a ton of flavor. Also I buy tomato bullion, it really adds flavor and also works if you don't have tomato paste on hand. Also I like to buy fire roasted stewed tomatoes. Taco soup is good, I know you guys said you can't use canned cream soups, which is too bad, but chicken and dumplings is a good one, potato and leak soup is good, corn chowder, clam chowder, clam chowder can be made with bacon, it's so good homemade.

Evie Cage, CC is on now! I've noticed that if it is a newly posted vid, it may take a little while for the CC to show. In the future, just keep trying, and it may become available for you.

I bought a rotisserie chicken...do you think I could boil that down (after meat is off) to make stock and if so, do I include skin or no? I am not a cook! But I am trying..

    • @KellyCDB
      @KellyCDB 4 роки тому

Beverly Settle You definitely can! If you include the skin it will have more flavor but also more fat (if you let it cool you can skim the fat off though, if you don’t want so much of it)

Mary, you can also add cheese (this kind of melted creamy cheese) into the soup, it makes it taste 100 times fuller and better :)

Haha, I had to look up where chili originated and supposedly it originated from southern Texas by working-class Mexican women. It has also been very popular with Texas cowboys. So I guess it is both?
Also I have made a similar Mexican style dish like that. I layer typically flour tortilla's, taco meat, picante sauce or verde sauce, and cheese several times and bake it. It really is very good, I haven't made one in a long time. Then serve it like you did with sour cream or guacamole. 😉

Hi Mary, my best friend taught me to keep a bag in the freezer and put all your veg waste in it until you are ready to make your broth. That way you don’t have to use new veg to make the broth. I even put in celery leaves, carrot tops, old parsley, onion peals, garlic peals, zucchini and squash tops, carrot and potato peels, etc. hope this idea helps 😊 oh and BTW, pretty sure your “chili lasagna” would be considered red chili enchiladas. 😉
