    That's wild that they've got the recipe so fine tuned that they can use those sphere forms without some mechanism to lock them together and they fill the mold completely without pushing the halves apart. Also, I want that robot mixer.

      Come to Santa Clara California, look up a bakery called Crossainte. They make the cubes and the best tasting crossaint I've ever eaten.

    tutto molto bello e preparato con grande maestria, quello che faccio fatica a capire è perché usare la pasta sfoglia per un prodotto che non viene sfogliato a causa dei motivi che la chef ha spiegato. Credo sia un esercizio di stile un po' superfluo, anche se immagino il risultato sia comunque molto buono

      È la fine che sta facendo l'arte culinaria in generale, Gualtiero si sta rivoltando,povero,per avere successo basta mettersi a cucinare sul terrazzo di casa e dire due cazzate in romano,che schifo

      In realtà il prodotto è sfogliato solo che per mantenere quelle forme perfette si è dovuto trovare un compromesso con l'alveolatura e l'umidita della stessa, di conseguenza con la sensazione tattile al palato che alla fine risulta più vicina ad un effetto brioche che ad un effetto croissant.
      Secondo me comunque la tecnologia è ancora giovane e sicuramente si può fare meglio, sia forse a livello di costruzione dell'impasto, ma soprattutto a livello di stampi che a me sinceramente non convincono fino in fondo.
      Se la moda riuscirà a tenere nel tempo anche i risultati tecnici miglioreranno di conseguenza a mio avviso.

    i am curious that the square mold need to hold tight else the dough pushes out. But the round mold only cap without locking why the dough does not push out of that?

    These look amazing! Quick note to the translator: that is not brewer's yeast. It's baking yeast. Brewers yeast is a whole other animal and has nothing to do with leavening.

    Chef I am in love with you. Absolutely beautiful work. She is absolutely gorgeous. If I was 10yrs younger I would apply for a position in that pastry kitchen and work 15 hour days to learn everything but definitely pastry as I could not stop listening and watching her techniques.       Se non ricordo male 3.50 costa ogni prodotto, che sia cubo, croissant, o altro. Ma potrei ricordare male. La sfera non lo so ma suppongo sia sempre allo stesso prezzo

    Bakery in San Jose, CA makes the cubes. Its called Crossainte. They use imported french flour and butter... they have the best ceossaint ive ever eaten. The butter is sweet and the layers melt in your mouth.
