I’ve seen this similar technique used before on Movable Feasts just a few days ago. The temp was between 250-300 Deg but not above 300. And the plastic did not melt wrapping the meat in the oven in a pan. I thought it would have but it didn’t.

you can use plastic wrap as long as the temperature is under 300 degrees F.

yes .. good question .. i believe there is any alternative for plastic wrap cause you don't grantee the heat in there
it's food grade plastic wrap, these are oven safe. you can buy them specifically instead of the regular ones at most stores
