Ludo, you should mention that this is not the classic Tatare. The traditional Tatar is much more purist. There is only meat an egg yolk a touch of Cognac and fresh salt and pepper that's it. All of the condiments what to be on the side for those who want to add them, but to put ketchup into steak tartare suggest to me that you grew up on a very different state to tar then I did.
