We have an eggplant salad (salata de vinete) as part of our Romanian cuisine. It's a very popular salad in our country and we char it very well like that for the smokiness. It's not always charred, but that's the best kind I believe. Anyways we always take all the skin off, but u needs several eggplants to make a salad. it's the best.
@the blobfish I agree that was my original point galbi means rib/ribs in Korean so traditionally short ribs cut across the bone or flanken, he refers to it as galbi steak because he is using a similar marinade so it’s his play on the dish

looks great, not your usual complimentary ingredients that come with galbi, never ever seen yogurt or eggplant with galbi, but it sure does look tasty
