    Am I ok to use a regular pan? And does coconut water with sugar work for this?

      Hi Denise! I've only used natural coconut water but I think coconut water with sugar would work too! I haven't made it in a regular pan but I also think it would work. Sorry I don't have more concrete answers for you! I think this is a forgiving recipe as long as you get the caramel part right and then it's adjustable to your liking! Hope that helps!

    I don't know what i did wrong. My sugar didn't caramelized brown. It was delicious though. Thank you!

      Aww oh no! This is usually the hardest part. Did you have the heat on higher and let the sugar start to brown? It usually takes a few minutes but once it turns brown and gets liquidy, it's pretty quick. I usually turn it down after the sugar caramelizes and I add the fish steaks. Hope you try it again and it works!
