    2 lbs Whole Milk Ricotta
    2 Extra Large Eggs
    ½ tsp Black Pepper
    1 tsp Salt
    ¼ cup Fresh Parsley
    ½ lb Mozzarella (shredded)
    1 cup Pecorino Romano Cheese (grated)

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera?
    Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
    Does Gina read the comments?

    I can't stop watching these vids. When I was a kid we had a neighbour that was an Italian family. The smells that filled that house was unreal. Their grandma made enough food to feed an army and we could always just walk in and she would feed us. I'm getting nostalgic.
    I remember going into the basement and there were huge tables with pasta drying on them. So good.

      Oh I whole heartedly agree. My fiancee passed away from breast cancer. She and her family were first and second generation immigrants from Sicily. She brings back wonderful memories of the love and food. I love these videos because her recipes are really good too! I've tried some of them and they're really good.

    Hello Nonna! Our US Marine Corps troop loved watching you in our last deployment to Afghanistan, we are home safe now, for a while. My wife and I are attempting to make your ravioli and gravy tomorrow for Sunday dinner after Mass. I hope you can show us how to make your canned tomatoes. Is it Roma tomatoes skinned and cooked down with a stick of basil?

      Wow, what a kind thing to say. I was just doing my job and think it comes with the territory. Hopefully the worst days are behind me. What works the best for me is to do the opposite of what VA therapists have said, and find things to pre-occupy my mind. I never thought I'd get into cooking, but it's been really enjoyable.     Grandma Gina - I LOVE YOU!!! Tonight I made with my 20-year old son, home from college, the cheese ravioli. We can't thank you enough. We have made them a couple times before, but this time we used many of your tips and tricks and they were phenomenal! Not only were they delicious, but we created some wonderful memories working together and cranking out the dough. Thank you for sharing! You are a gem to be treasured. I only wish we had thought to make video's of my grandmother, she has been gone many years, but I try to keep our traditions alive through food.     Loved the video. My great grandma came from Italy when she was 19. Married and raised 3 girls. She lived to 107 and died in 1989.i never got to cook with her. Brought great joy watching this video. My Gramma Sarica spoke broken English, so I really picked up on everything she was saying. My grandma who was all Italian too lived to be 92, but she liked taking shortcuts later in life. What I wouldn't give to learn from them. I am so excited I can learn with your Grandma!!

    My wife is a fantastic Italian cook but we have watched all of your videos so far and love your mom. We spend a lot of time in Montemiletto, Italy and the style there is very similar to your moms. She is a jem and i hope you cherish her as you should.     I had a little (4’9”) Italian grandma too. Yours is a little more pleasant than mine was but cooking with her was the same -all business. She wouldn’t hesitate to tell you you were doing it wrong. She had a massive stroke at 72 and lost the function on her left side. So chopping and prep work was left up to me and my teenage ignorance didn’t have the patience for her. But it was an experience that, as an adult and now mother, I remember fondly. Also, I like your grandma’s rolling pin; I imagine it’s been a tool of many uses including baking and child rearing. Thanks for the tutorial and I look forward to watching more. In the words of my grandmother and her never-ending helpings, Mangia! Mangia! God bless.

    She is so sweet. I enjoyed her so much. Loved it when she said "You listen." That was a gift of love. Kneading that dough is hard on your hands. wrist and shoulders. I know because I use to bake. God bless you Nonna.

    i love the way she pronounce the english words.. hahaha .. my grand mother never bought anything from the shops.. she made everything home made.. e.g. all kind of food, desserts, alcohol, products for personal care, decorative house stuff, clothes etc.. she never been to doctors as well.. she made her own medicines.. she new remedies about everything.. amazing..

    Thank you so much for your videos. I love watching you make Italian meals from scratch. My best friend is Italian. Her mother arrived at a young age from Sicily. When we were young girls, we would go to her grandmother's house and watch her cook. She made her own pasta, sausage, and cheese. We would go in the basement and see all the hanging meats or pasta drying. Her grandmother spoke very little English so there was not much conversation, but I loved to watch what she was doing. You remind me of her. Again thank you.

    I just recently discovered this beautiful soul. Italian Grandma makes me happy just watching her. I and my 75 years young father have really enjoyed watching her but we both want to know where did she get her large boards that she kneads the dough on? I think my Dad and I are just a tad bit jealous of her boards! Please thank her for sharing her recipes as well as a little part of her life.

    Thank you so much for sharing your amazing grandmother with us. My grandmothers are in too poor of health to cook, and my great-grandmother has been gone 13 years now, and unfortunately i was too young and immature to care to learn from them when they were still able to teach me. I value being able to pass along these family traditions, thank you for sharing yours.

    I love food. This is a great demonstration of how we used to be connected to our food, our family and our culture. As she points out, "we didn't go to the store to buy pasta". Seems fitting that during a time when homogeneity threatens our uniqueness, this vignette shines through. Thank you.

    I wrote down your grandma's recipe and made the pasta dough and filling tonight. I shaped the pasta into tortellini for a quick tortellini en brodo for dinner and it was the best I have ever tasted. The pasta was so silky and delicate and the filling was sublime. Tomorrow I am going to make her ravioli. Thank you so much for posting this video and give your grandma a big hug and kiss from me!

    I love watching Nonna's videos. My Mom moved from Italy in 1966 with four kids in tow, so I love hearing Nonna's stories. I have made some of the recipes and they are delicious. Mostly I watch for entertainment, and to pick up pointers. God Bless Gina and her family.

    Sorry I'll have to watch the video again as I couldn’t concentrate on what she was doing. I don’t have an ounce of Italian blood in my body, but at one time I too had an amazing grandmother and her husband, my grandfather was the only hero I’ve ever had. My grandma was born in the English Midlands in 1900, a time when country living was make and make do. She was by far the best cook I’ve ever known, and I was a chef for over 25 years with massive Italian influences including my greatest mentor. To this day I have great memories of my grandma chasing my grandad out of the kitchen, a man she totally adored and spent over twenty years missing. I read the description for the video and right down to the church you could have been talking about my grandmother. I bought her an electric mixer once, she never took it out of the box, but nor would she part with it as one of her grandchildren bought it her. It seems trite to say thank you for this very special gift, I hope your mother/grandmother is in good health. Thank you, very much indeed.

      Hi Mark, i loved your little message to Gina, my granny was born in 1901, in oxford, she spent a childhood on her dads small holding with her 8 brothers and sisters , many of whom she lost during the wars, she moved into service at the age of 13, , she met my grandad and married and had her 1st of 3 boys in 1933, she then moved up to Yorkshire, old for her times huh, anyway we never had anything growing up, and what we had we relished, she taught me the basics and i remembering asking her how long this or that to cook, she cooked with anything she could find, from pigeons she shot at with a catapult and rabbits to nettles she stewed lol she died in 1984 and i married in 1985 aged 18, i miss her dreadfully, but like you, i thought she was the best cook in the world, ive learnt so much from the little time i had with her , and now my family refuse to eat out because apparently i do it so much better lol

    my grandma was 92 as she died, no chef could cook like her. only old people can cook am meal from scrap, that taste better then a 6 star meal. no flavor enhancers or something else. old people are the best. honor them.

    Love watching her cook and make her recipes. I just made some minestrone soup yesterday. Had to use dryed pinto instead of white beans, but followed her recipe and my grand kids loved it. Gina, your awesome. ❤️

    Grandma....I love you...you remind me of my Grandma when we used to make bread. I already tried your bread recipe. Loved it because it made so many. Now I’m watching ravioli video.     Thank you for sharing this! I've tried to make ravioli before but it never came out quite right. With Gina's instructions my ravioli today was amazing! Can't wait to try more of her recipes.

    I think, there's no grandma in the world, who can't cook like some young goddess.
    Unfortunately in my family the "old generation" took all the knowledge of the recipes into their graves with them. You will probably recognize maybe in 20 years, that these videos are pure gold.

      Kosekans my grandmother couldn’t cook at all. Like, gave the family food poisoning multiple times, my Mom burned water so badly the fire department was called twice... my brother and I joke we learned to cook in self defense!

    This video was bittersweet to watch. Brought back memories when I was a small boy watching and helping my grandmother (who has long passed away) make ravioli on the dining room table. I still have her big rolling pin. Great memories. Thank you for letting me relive them. Cherish yours.

    Gina is so much like my grandma Mary from Potenza Italy. No need for air fresheners or anything to detract from the amazing aromas in her house. You could gain a pound just by taking a whiff. Don’t tell anyone but sometimes I’d skip evening mass to go visit and we worked our way backward from dessert through the main course. It was truly an addiction. Aside from her cooking her incredible story of immigration and making her way is amazing. I miss her very much. J. Carlo C.

    I started searching for roasted cauliflower and I ended up with your Italian grandmother videos! 😁, I don't know how I stumble upon these things.
    But I was sure happy that UA-cam decided for me as I also had a Nonni and Nonno. I sat and watched about four of your videos in a row because the memories just were unbelievable watching your grandmother and reminding me of mine.
    We didn't have the luxury of video cameras back then so we have lost out and so glad that you have brought some of that back to us.
    These are going to be treasured family videos for you and your grandchildren.
    I noticed in the manicotti video that you started adding the ingredients on the screen and printed the recipe at the end of the video. Since you are retired haha (and you sound very young to be retired), have you thought about going back to the other videos and doing the same thing?
    And why are you so silent in the manicotti video? I actually kind of liked listening to your interaction with her. Reminds me more of a family video instead of something super professional and dry.

    I would buy her a food processor and show her how to use it for her next birthday. When I showed my mom she was amazed that the results were as good if not better and it only took 2 minutes to make a batch of dough with no elbow grease. Saved her a lot of work! In her 80's she was very grateful that that machine she was able to do what she loved doing for her family.

      Oh no!! You would be taking away all that she savors and loves about preparing food for the people she loves. It’s all in the tactile “old school” techniques that make it a labor of love for her! I know because I am 70+ years old and some things are best just left alone. I have a food processor that I often use but when I make pasta I use my hands and a hand cranked pasta maker. It’s my meditation...

      I1 have a strong feeling that the food processor would stay in its box. The food is prepared with love. She completely enjoys what she is doing. It makes her happy. There is nothing more this woman wants other than to show her family how much she loves them by doing what she loves to do the most - cooking. Because cooking does not feed just the body - it feeds the heart and soul - of both the cook and the people for whom she labors.

      She doesn't use a recipe. She works in the amt of flour, and kneads the dough by feel until it is done. Flour can absorb moisture, so a machine & recipe can't adjust for this variable. Experienced judgement by tactile sensation.

    How can someone thumb down this video? Her videos are awesome, she explains everything, her accent is thick but you can still understand what sh's saying, she's cooking homemade from scratch dishes, she makes her own sauce, her own pasta and never uses anything in a can, she uses fresh vegetables and very little seasonings aside from the basic ingredients which she uses to create the dish (NO SOUL FOOD SEASONING, ADOBO etc.) She's awesome I can't find a reason to give any of her videos a thumb down. Bless her heart

      Nonna ends in an a, so that's female; Nonno ends in an o, so it's male: Grandpa. And salmi is an actual food, a stew of wild meat and a lovely rich sauce.
      You don't need to be correcting people--it's rude and shows what you yourself don't know.

    I love your video's, they're very inspiring and well done; making it easy for even a beginner. I plan on making this with my 5 year old grandson and 8 year old granddaughter. I'm going to have them play hookie from school when I have them with me while their mother is on vacation. Going to be great memories with them!     "Gardening With Vincenzo" here...Long ago when I was a Young Lad in an Italian Household and we Always Made Homemade Raviolis for my 8 member household and we even had a "perpetual" sauce pot and when we made Raviolis we would clear the table and I would work the dough...fill, crimp and place on cookie sheets making 500 at a time and freeze them..Great Memory's !

    Such an adorable Grandma. We have made the pasta that she has shown ans it turned out fabulous. Her skill is a treasure to all her generations. A lady was so rude to comment "OMG, whatever' at minutes 21.00 ish. that is such an idiot saying that. Hope she is not a family and just a bored spectator, and yet have no rights to disrespect Grandma.
