I just made this!!! I don’t even care for cranberry sauce but wanted to try making it with adding in the orange since I’ve never tried it with that. It is SOOO DELICIOUS! This morning instead of syrup on our waffles we had them with the orange cranberry sauce! THANK YOU for your instructions :) edit: husband doesn’t like cranberry sauce and said this year he was going to have some 😍 will be making this again.
My mom and I recently discovered your channel and have power watched almost all of your videos. Very informative and detailed and honestly has inspired us to start canning!! Thank you for sharing you knowledge and recipes!
Couple helpful hints I have found since making this delicious recipe a few times now. I found some of the thickened cranberry mixture was hard to scrape out of the blender so I added the orange juice to it and swished it around to get everythng that was sticking on the bottom and under the blades. You can also just use an immersion blender right in the pot. Everyone loves this recipe , thank you Pam :)
Thanks so much for this video! I canned 16 half pint jars using your recipe..it`s deeelish!! Even hubby, who will eat his traditional spoonful every year as he doesn`t care for cranberries at all..said " Mmmm..that`s good!" :) Think I`ll grab some more while they`re on sale & can up couple more batches for the pantry. No law says can only eat them at holiday time!
Thank you so much for all your videos I have learned so much and now I have started canning and preserving. Every time I want to can something, I alway check to see what I can learn from you first. I call you my Canning Professor, if I see something others have done I check your video’s, if you say no it is not recommended then we don’t do it. I need to make sure everything is safe for my family. Again thank you, Thank you. I also love your micro moments.
At this time of Thanksgiving I would like to say thank you so very much for all you contribute to many of us newbies! I canned way back in the day and have recently picked it up again, thanks to you! The time, effort, research you bring to all of us is much appreciated! I made this cranberry recipe today and will serve it Thursday. It tastes yummy. Thank you again and Happy Thanksgiving to you and yours.
@60 years old I really want to learn the ART & SCIENCE of canning. My mother was an avid canner...but I was busy ...engaged elsewhere. I don't have a pressure canner...but I think I have what I need to do a water bath. Have a blessed day. LUCRETIA
I've always hated the cranberry sauce in the can and after I learned to make it fresh I never looked back. I use either apple or cranberry juice to cook the whole cranberries in and add the zest and juice of 1 lemon and 1 tablespoon of salted butter. I've been binge watching your videos and enjoying each one. Thank you again for sharing your recipes.
As enticing as it is to try and copy your bounty, I’m old school when it comes to cranberry sauce. For me, it’s got to be canned -Ocean Spray. Just brings back memories of my parents and home.
@@RoseRedHomestead this gave me a laugh, my mother was known far and wide for her cooking skills, I occasionally got to stir the pot, but I’ve never aspired to be as good or better. I’m just now, with Pams instruction beginning to believe I might be successful at canning. The canned cranberry jelly was just a fixture on the family holiday table, it brings back wonderful memories. In one of her videos, I got a chuckle when Pam commented her disdain for canned cranberry sauce. I never knew until recently that it’s possible to make our own, so, yes, I get your comment, and meet the challenge.
Pam, I made your cranberry sauce. My family loved it. I've discovered, that a teaspoon full in a cup of hot water, makes a wonderful tea. 🎄Oh, I did add 1/2 tsp cinnamon, 1/8 tsp ginger, and 3-4 shakes of ground cloves.
I’ve never had cranberry sauce but felt compelled to make this because you have never steered me wrong. Not only have I learned how to think objectively about food safety and how to do my own research, but dang! I learned I’m a sucker for homemade cranberry sauce! Question for you, do you have a video on reducing sugar in jams? I know sugar adds some preservative properties and aids the gelling, I’m just wondering if there is a scientific way to reduce the amount of sugar in a recipe like this one. Again, Thank you Pam!
Cranberry sauce is one of my favorites! One thing I picked-up from a chef is to add a little cinnamon to the sauce after it comes off the heat. It adds a layer of flavor that is perfect for a holiday. Thanks again for another great video!
After the cranberry sauce comes off the heat, I also add a pinch of nutmeg and ¼ cup Grand Marnier, Chambord, or raspberry liqueur (for 2# cranberries). I substitute half the granulated sugar with brown sugar and pineapple juice instead of the orange juice. Sometimes I add a can of crushed pineapple (drained) to the recipe. The juice that is drained out of the canned pineapple goes toward the necessary liquid in the cranberry sauce recipe. It's delicious!!!
Thank you so much. I could not help smiling as I sat here 2 something in the morning while hubby sleeps as though you were right in my living room. You were so pleasant and detailed. I loved the explainations and hope to accomplish making my first batch of cranberry sauce for the holidays! Enjoy! Loved your video also from beginning to the end.
Thank you for your kind comment! I know you will enjoy making home made cranberry sauce and after tasting it, the canned stuff will no longer have any appeal for you. Have a wonderful holiday season and thanks for watching.
I'm going to make this!!!! And...THANK YOU for including the "boo boo" with accidentally unsealing your jar! It made me feel better to know even the experts have some issues sometimes! 😊
For years I have made fresh cranberry relish. I tried this but added whole ground up oranges peel and all. Mixed with cubed pear and apple. Added the sugar and cooked it as you did. It’s so delicious. My husband and I use it on our morning oatmeal. It’s just fabulous. FYI I use equal amounts of fruit.
I have made cranberry sauce before but I don't know if I still have the recipe. But in the middle of watching this I stopped it to go out to the garage to get the 2 bags of frozen berries and made up a batch. Oh yes it's good. I'm enjoying a small dish with my Ruben sandwich and finish watching the video. And I have 3 full jars and a partial. Thank you Pam for that quick recipe.
I made a double batch of this earlier and canned it because I can fit 9 pints in my canner and have to make sure it is filled with jars so they don't bounce around. The only thing I did different was add 1Tlemon juice instead of orange juice. Thank you both for the video!!!
I've been wanting to add orange juice and zest to my cranberries, but I wasn't sure how/the ratios because I'm so new to canning. I'm so glad I saw someone who knows the safety guidelines use it. Thank you for sharing!
I recently discovered your channel. I am high altitude like you so your methods have helped me be more confident and I love your gadgets! I had to gift myself for my birthday with some of them!!
I like to add a cinnamon stick while cooking the sauce, pulling the stick out before canning or serving and a little Cointreau in the sauce while cooking is a nice touch, too!
After watching your video 5 times lol I decided you can do this so I did it and it turned out perfect. I did the happy dance lol. I am gonna make more. This was just my trial run.. Now I have to run to the freezer and get more berries and make a bigger batch. Thank you so much for your video and how easy you make it that I can do it.
Rosz: I do not know there are frozen cranberries on the shelves at this time of the year, but it will still be a 4-6 weeks for fresh ones on the stores. Jim
Love your videos. There aren't many canning channels that I trust. It is nice to be able to rely on yours. I made 26 half pints of cranberry sauce this morning. It was so quick and easy. The orange adds just the right touch.
Just made this, so yummy. I'm going to made the cranberry bread later today and put it in small loaf pans. Going to share cranberry sauce and bread with several friends.
Love your videos, I just made this and it is fantastic with the addition of the orange zest and juice. I have learned so much from watching your channel 😊 Thank you for sharing your knowledge and experience with canning, recipes and preparedness, it is much appreciated.
This year, I made a cranberry cream pie for Thanksgiving. The recipe had me make a cranberry curd and I would love to try canning it. I love the freshness from the cranberries with orange zest and juice. Your jam pan with the handle is very nice! I purchased a copper jam pan many years ago and the handles get so hot. I’ve been canning since I was 17 years old.
I MISS home canning. Since I moved back to California I have only made jam once. I used to can all kinds of stuff, even cantaloupe jam, just to try it... (Spoiler alert it wasn't good) I miss pickling and canning, gotta get back into it.
I knew if I came to your page I would find this recipe. Today is my first time making this and I was so excited you had the video! TY AGAIN. I am addicted to your channel :) Because I know how safe I am with all your content!
thank you for the inspiration of canning again. Wish I had paid more attention when I was younger and my Mother and my Grandmother were still alive, because that was a wealth of information that I did not get, but thank you again
Just finished canning 4 pints of this recipe. It is truly the best cranberry sauce I have EVER tasted! Thank you so much. Thanksgiving and Christmas are going to be yummy!!
I love watching your videos. You explain things so thoroughly. I watch your videos even if it’s not something I would make. Lol. Thanks for taking the time to make them 💕✌️🌱
Thank you for your kind words--we are so happy that you enjoy our videos. Viewers like you make it all worth while for us to spend the time putting these videos together.
Love Love Love your channel!! I am an avid watcher and have created a number of your recipes!! I am actually currently making this recipe with orange juice and zest!! Thank you for teaching us and sharing your knowledge!!❤️😊 Anxious waiting for you and you sisters cookbook!!❤️😊
Thank you so much for your fun comment! That makes us feel so rewarded when we hear stories like this. Cindy and I are working every day to get the book done...we are hoping by early spring it will be ready to publish.
Love LOVE cranberry sauce. Can hardly wait to whip up a batch of yours. I like a bit of orange in mine too. Also make a fresh raw relish with the berries and oranges. Tart but yummy!!
Thank you for the link! Mine came out absolutely perfect. Although like many of your followers I don't like store bought cranberry sauce but made this way it's really yummy! I'm gonna go back to get more cranberries to water bath can some for the later upcoming holidays and baking. Thank you again!
I am so excited for cranberry season in Wisconsin. My husband is working there right now and will get some fresh from a roadside stand. We often boil the cranberries and add a bit of sugar and after cooled we put a bit of the yummy fruit mixture over cottage cheese. We love it! This year, thanks to you, I will also make our cranberry sauces.
I use pear honey or apple butter on cottage cheese as my go-to condiment, so now I can add cranberry sauce. I made some yesterday using a different recipe, but after watching this, I think an afternoon run to the store is on my agenda this afternoon. So simple. So good.
Thank you for your clear instructions. I've tried before and the directions had me straining the skins out... ugh.... vitamix to the rescue! I even took some of the left over sauce and made cranberry juice. winner winner
There is just something about freshly done jellies cranberry and orange sauce, that makes you think you haven't had cranberries or oranges for a long time! Then to put chopped apples into the mix-- Fall fruit Heaven!
I am in my kitchen finishing up my Thanksgiving dinner watching your video & you made my mouth water when you said cranberry, banana bread. That sound so good will be looking up recipes for that. Awesome video thank you .
Thanks for watching and Happy Thanksgiving! Our power was out for 12 hours, so we are just getting started with dinner preparations. I will post the recipe for the Cranberry Banana Bread under the video.
This looks fantastic, and I'm totally in love with your jam pan. Lol. (Edit: for all of my "tut tut, rebel canning is bad", I believe that I did it accidentally. Followed an apple pie filling recipe, but instead of slicing the apples I used my dicer- the lid comes down with a little slam and voila. I thought it wouldn't be a bad idea to have dices for strudels, coffee cakes, and homemade apple pie muffins, where you want apples but not chunks.) Anyway, thank you for teaching us so much!
Looks so yummy I'm new to canning and just herd of these jars makes me nervous to try in them but definitely making this thank you for you time to show us this.
You can use Ball jars for this recipe as well, of course. But the Weck jars do a fine job with water bath canning. Thanks for watching and for your comments.
I love making my whole-berry cranberry sauce. It is so delicious. I would love to cook with it, but I don't have any recipes. Maybe sometime you can teach me a chicken or beef recipe using cranberries.
I cook whole berry to 200 degrees and jelled to 205 degrees. I use my food processor to purée the cranberries for jelled cranberry sauce.it makes a mess if I put to much of the popped cranberries in it. I use Mason jars, lids and bands and process them by the book in my hot water canner. My canner will process a whole flat at a time.
I love the look of the Weck jars but I have broken the seal too many times and will not can in them again. Also, they are not practical for me because of the cost. Love the recipe.
I am glad the timing worked for you! Thanks again for watching our videos. There are lots of great-looking recipes for cranberry banana bread on the internet. This one is very similar to mine except bump the flour to 1-3/4 cups, skip the graham cracker crumbs, and use 1 cup of whole berry cranberry sauce instead of the dried cranberries. www.tasteofhome.com/recipes/cranberry-banana-bread/
I subbed because you did very well in your presentation. Also, I love you red hair! I make cranberry jam each year, and use my steamer for juice to have through the winter time. THis lools amazing. YUM! Blessings!
After the cranberry sauce comes off the heat, I add ½ tsp cinnamon along with ¼ tsp nutmeg and ¼ cup Grand Marnier, Chambord, or raspberry liqueur (for 2# cranberries).
Thank you SO much for this wonderful tutorial! Will you please provide a link to your jam pan? It is exactly what I need, but didn’t know existed! Thank you again for your videos.
You are very welcome! I love that pan! The first one I bought was a dud, but this one is fantastic. Here is the link: www.amazon.com/gp/product/B0000C0TFF/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1
Hi 😃...the Kitchen Craft is no longer available on Amazon right now. What was the other brand that was a dud please? What should we look for in a good pan? I’m really enjoying your videos. I’ve ordered my first ever canner...a All American it will be here in a few days so I’m gearing up lol. Thanks so very much for all your hard work showing us what to do.
I’m very impressed. I would like to try this but have no experience with canning. Also, putting the whole berries in the vitamix blender makes a jelly- minus skins and seeds?
Click on the thumbnail for this video (Cranberry Sauce) and the USDA recipe is in details. Also, click on the thumbnail (below) for A Chat, Some News...and in the Details you will find information and registration for the the Water Bath Canning Course that we put together. Jim
Is it safe to HOME CAN the traditional recipe with the 12 oz pkg (3 cups) cranberries, 1 CUP SUGAR, 3/4 cup water, plus 1/4 cup orange juice, some orange zest too? I have lots of Ocean Spray 12 oz bags in my freezer I could use. I do understand sugar helps with the pectin, I still USUALLY reduce it to 3/4 cup sugar because sugar causes inflammation in some family members. So, I thought I could cut back on the liquids, and maybe substitute with 1 Tbsp orange juice concentrate but still add in zest, since I do have several oranges on hand. ANY THOUGHTS? P.S. I am excited to try your Cranberry Banana Bread but I will need to make ours Gluten Free. I will attempt with Bob's Red Mill 1:1 flour. If that fails, I will keep trying because it sounds delicious. Thank you and your husband for all the hard work and research. I am so thrilled I found your channel. You are knowledgeable and such a delight!
Your pan you used for cooking the cranberries how big is it? Or how much does it hold quart wise. I have never cooked cranberries but love cranberry sauce.
You mentioned your for your elevation, 20 minutes. But what is your elevation? I am at 1,020 so I need to figure out how long I need to process it, I can’t wait to make this!
I just made this!!! I don’t even care for cranberry sauce but wanted to try making it with adding in the orange since I’ve never tried it with that. It is SOOO DELICIOUS! This morning instead of syrup on our waffles we had them with the orange cranberry sauce!
I will post the recipe for the Cranberry Banana Bread under the video.
i have tried this at a thanks giving dinner was lovely ty
My pleasure 😊
This looks fantastic, and I'm totally in love with your jam pan. Lol.
(Edit: for all of my "tut tut, rebel canning is bad", I believe that I did it accidentally. Followed an apple pie filling recipe, but instead of slicing the apples I used my dicer- the lid comes down with a little slam and voila. I thought it wouldn't be a bad idea to have dices for strudels, coffee cakes, and homemade apple pie muffins, where you want apples but not chunks.) Anyway, thank you for teaching us so much!
As always! Just looks wonderful!!
Thank you so much!
I make the jellied and use it for PBJ. A lot of jellies/jams are entirely too sweet. I haven't thought of using the orange juice before.
Thank you , this is exactly what I’ve been searching for , your instructions are so easy to follow! Great channel.
Glad it was helpful!
You are the best!
Thank you so much!
LOVE your amazing videos!!!!! THANK YOU for taking the time to make them and impart your great knowledge
I watched your cranberry recipe and it looks absolutely delicious and can't wait to try it for the holidays and give as gifts. Thank you.
It really is good. And I use mine for lots of things all year long when I have a supply on our shelves. It will make great gifts!
I love those jars! So pretty. Thanks for the recipe.
Glad you like them! Thank you for watching.
I love making my whole-berry cranberry sauce. It is so delicious. I would love to cook with it, but I don't have any recipes. Maybe sometime you can teach me a chicken or beef recipe using cranberries.
Looks so delish!
Thank you! It is a family favorite.
Loved watching your video. So much information. I also love your jelly pot. Could you share what type and size you are using in the video? Thanks.
Can the recipe be doubled and tripled looks so good
I love the look of the Weck jars but I have broken the seal too many times and will not can in them again. Also, they are not practical for me because of the cost. Love the recipe.
Yes, I have struggled with them for pressure canning, but I usually have success with water bath canning. Glad you like the recipe.
Love your videos. I put the whole orange and pecans in my cranberry sauce. Can you can pecans with your recipe?
Wonderful timing. :) It’s what I will be working on tomorrow. Thank you for sharing. .....cranberry/banana bread you said???? Ooohhhh sounds yummy!
Looks delicious! 😋 I want to try weck jars, but their price will not let me right now...😔
how fun! Thank you!
Glad you enjoyed it!
Thank you!
I subbed because you did very well in your presentation. Also, I love you red hair! I make cranberry jam each year, and use my steamer for juice to have through the winter time. THis lools amazing. YUM! Blessings!
Thank you for your kind words and for watching!
After the cranberry sauce comes off the heat, I add ½ tsp cinnamon along with ¼ tsp nutmeg and ¼ cup Grand Marnier, Chambord, or raspberry liqueur (for 2# cranberries).
Thank you for sharing this recipe for the two ways to can cranberries. Can you share the name of your canning pot? Also where you found it?
I forgot to debubble cranberry sauce. Ehhh do I need to process again. The cranberry has set already. Should I freeze it to be safe?
How do you check the seal with Weck jars?
I grew up with them in Germany, but I was to young to be concerned with that 😆
Looks lovely!!! Where did you find the pan you are using ? Love that!!
Your pan you used for cooking the cranberries how big is it? Or how much does it hold quart wise. I have never cooked cranberries but love cranberry sauce.
Hello Ms Wonderful, can you tell me if there is a canning recipe using apples, cranberries and orange zest??? Something like a jam? TIA
YOU WATER BATHED I LOVE. CAN YOU PRESSURE CAN WITH WKE JARS? LUV LUV YOUR VIDEOS
Yes, go to www.healthycanning.com for more specifics. Jim
Can you make the recipe in the instapot then water bath can it
Have you tried freeze drying rather than canning and if so did it work?
You mentioned your for your elevation, 20 minutes. But what is your elevation? I am at 1,020 so I need to figure out how long I need to process it, I can’t wait to make this!
You can find processing times for most things at this link: nchfp.uga.edu/publications/publications_usda.html
I’m allergic to oranges, how do you think lemon would be?
Thank you for providing such great content, I enjoy your channel immensely.
I think it might be very nice! You should try it!
Fixing to make this. I do not have wet jars.
Not: You can use regular canning jars. Jim
