The “new character” Varys was referring to was Illyrio Mopatis, and he was seen in the first season. He helped sell Daenerys to Khal Drogo and also, gifted her the Dragon Eggs at her wedding. Lastly, he was the person who was conspiring with Varys in the red keep tunnels, when Arya was hiding in there. She overheard part of the convo and reported it to Ned, but she had no idea what she was hearing.
They didn't recast Lancel Lannister. It's been a couple of seasons since we've seen him last time. It's a credit to the actor how well he depicted the change into a more confident man. It's funny what confidence, better posture and some muscles will do to a man's looks.
I mean his options were to basically be Lord of the Wildlings under Stannis or to be burned alive and have no control over his followers. Not a tough choice imo.
Just to clarify about the chains on the Dragons, when they were babies they didn't burn through the chains to get out. They burned the Warlock and his Magic Died with him. The chains on Dany and the Dragons were part of his magic, so they disapeared off of them as he burned to death. That's why they are able to be chained up they cant just burn it off
